Waipara West Pinot Noir 2018
Estate grown on 3 blocks with differing soil structure, wind exposure and clones – early 1980’s selections from St Helena and more recent Dijon clones. The colour is an attractive, very bright ruby garnet with distinct crimson hues at the rim. Aromatically it is as striking as it is seductive. Bright red fruits - raspberry, strawberry and Morello cherry have immediate impact with an equally impressive array of oriental spices - anise and clove. Ripe seed aromas of almond kernel and cherry stone lift the nose. Time reveals an inner core of darker black cherry, and just a hint of bramble all kept in check by some very attractive yet subtle French oak. The palate is soft, silken and warm but with a certain nervosité which is to say that as a young wine it may appear both bright in acidity and forward in tannins, but that’s just for starters. Those are simply the framework in which the wine is cradled, the fruit depth is palpable, the Pinosity generous and its presence authoritative.

Geographic diversity is what Locations – CA is all about. Provided with a wide assortment of microclimates and soil profiles to exploit, it can be a winemakers dream. With a goal in mind to create a blend that showcases the best of the Golden State, we navigated the famed appellations of Napa, Sonoma, Mendocino, and the Sierra Foothills for prized fruit. Once secured, we were able to apply some creativity with the blending components to ultimately settle on a wine worthy of Locations Veiled in dark ruby red, the wine bursts with a tempting perfume of red and black fruits, dried rose petals, and a peppery note which offers some lift. Dense and ripe upon first pass, it evolves into a savory compote of raspberry, kirsch, and bitter cherry balanced out with mineral and herbal notes. The finish is substantial with tangy acidity, yet buffered with polished tannins that please the palate.

Woodford Reserve® Master Collection Chocolate Malted Rye
The 2019 Master’s Collection Chocolate Malted Rye uses a malted rye as a dynamic flavour contributor. The rye malt was roasted to a level that its natural sugars caramelized into a dark chocolate note.

Bright violet in the glass, the 2020 8 Years in the Desert is the epitome of our style, the reason we are even here in the first place.
Nose: As it’s being poured, the aromatics hit squarely on the nose with a perception of sweetness: pure brambly raspberry juice and blueberry preserves with a hint of white pepper and High Sierra forest floor. Yet, the perceived sweetness on the nose is just that, perceived, and doesn’t carry through to the palate.
Palate: Lush and enveloping with a beam of acidity, notes of blackberry pie, plum and kirsch flourish. Ultra-round tannins and lingering raspberry, the wine finishes in slow-motion.

Orin Swift 8 Years In The Desert Gift Set
Dark garnet with a lucid rim, the wine exhibits aromas of briar fruit, ripe blackberry and dark plum with a tinge of minerality and charred meat. Brawny on the entry, it has an equally big mid-palate with complex flavours of ripe brambly fruit, a touch of earth and notes of espresso bean. Ornellaia is a cuvée of Cabernet Sauvignon, Merlot, Cabernet Franc & Petit Verdot and the faithful expression of unique terroir developed in harmony with nature. 2016 represents another immensely successful vintage highlighting all the virtues of Bolgheri’s climate: abundant sunshine, without excessive heat, a dry summer to allow the grapes to achieve perfect ripeness and concentration, and just about enough rain to avoid stress. All these elements combine to yield a wine that shows lush ripeness and crisp firmness, opposing forces creating a sense of dense raciness we like to describe as “tension”.

A glowing pale straw with a striking touch of chartreuse sits in the glass. Aromatically, the wine pops with lime zest, gooseberries, ripe passionfruit, fresh cut grass and lemon bars. Chalky tannins a la black tea or baking chocolate round out the wine with a pleasing finish of sweet oak.

Beronia 198 Barricas 2019
Deep garnet red with a high robe. Clean and bright. Attractive nose with aromas of red fruits on a background of chocolate and dried fruits. Tobacco and balsamic notes also appear balsamic notes that add great complexity and freshness. Round, tasty wine with a balanced acidity. Spicy notes and sweet tannins appear on the palate, making the wine very appetising on the palate.
Ideal for drinking with roasts, stews, grilled meat, cured meat and mature cheese.
Store in a cool place (maximum 14ºC), away from direct light and strong odors.
Recommended consumption from release to the market until 2031.

Characterized by a lively ruby red colour, Le Serre Nuove dell'Ornellaia 2018 is a wine of great aromatic complexity, a distinctive feature of this vintage. In the glass, aromas of berries, blackberry, raspberry and red cherry are accompanied by floral hints of wild rose and spicy notes of pink pepper and liquorice. On tasting, the wine has a good tannic structure, enveloping and balanced, with a crisp and savoury finish.

Beronia Verdejo Rueda 2022
Beronia Rueda Verdejo Blanco 2022 is the only wine made by Beronia Rueda, the González Byass group’s winery based in that Denominación located in the region of Castile. A unique single-varietal that’s the result of double harvesting and full fermentation in stainless steel and concrete vats. Elegant, fresh and mouth coating.
The white Beronia Rueda Verdejo 2022 was designed from grapes that were harvested in two stages: in the first, the earliest grapes that give the wine its freshness and a slight herby touch were picked; the second was focused on selecting the ripest and most concentrated berries to lend it volume.
These are the ingredients that go into making Bodegas Beronia Rueda, the only wine produced by the González Byass group’s firm based in Rueda, a Denominación de Origen located in the region of Castile. As in the three previous vintages, the grapes from the two harvests were processed separately and fermented in stainless and concrete vats. The final blend is a versatile, single-varietal Rueda wine that’s a perfect match both for exotic food such as Asian (sushi, for example) and for classic dishes like white fish, smoked fish and creamy cheeses. An almost-black, opaque garnet core sits in the glass with slow-moving tears falling down the sides. Immediate aromatic notes of ripe cassis, charred ribeye, sandalwood and freshly cut oak pilfer — breathe deeper for more. The first sip is a complex, layered conundrum of blackberry, black plum, fennel, licorice and dark chocolate. More sips peel back the layers to reveal a rich and balanced wine with a deep cassis core. A sweet linger on the finish closes the wine with softly textured chalky tannins.

Is brewed using only superb premium “AIYAMA” rice cultivated in Hyogo prefecture together with Mount Fuji’s water. Aiyama rice is a top quality rice that began cultivation in Hyogo in 1949. It is challenging to grow and production is small, making this a RARE & Limited Edition sake.
Pleasant acidity of sake made by Yamahai’s technique that derives the umami from highly polished rice ratio. A sake with a subtle aroma derived from traditional yeast, making it versatile in pairing with a large variety of dishes.
This is an elegant sake that brings out the richness of Aiyama rice which is excellent for food pairing.
It comes in a black bottle which signifies its premium status. Traditionally, black and blue bottles are strictly for high grade sakes only. The dark colour blocks out UV rays from the sun, thus preventing undesired aging and retains the flavours in the bottle.
Awarded GOLD medal at Kura Master 2020, held in France on 31 August 2020.

‘Suppin’ translates into ‘to go bare-faced or without makeup’ and explains that this sake is made without unnecessary manipulation or work. A ‘Pure Rice’ sake made without charcoal filtration, pasteurisation or dilution. Robust and full flavour.
Tasting Note: Displays a vibrant, pale lemon colour in the glass. Aromatics take some time to emerge, and while only mildly intense the aromas are quite complex with notes of white flowers and acacia, layered over pear, green apple, custard and white chocolate. There's a good weight to this sake on the palate, creamy and textural, showing excellent umami feel. As with the nose this is notably complex with flavours of pear, apple, hints of lychee and green melon, custard and white chocolate. Excellent. Serve chilled.

Matured in fine Oloroso sherry casks from Andalucía in Spain, this richly sherried Highland Single Malt Scotch Whisky presents exquisite complexity, with dark treacle, allspice and walnut carrying on into the long, lingering finish.
The expression is bottled at 46%, non-chill filtered and natural in colour.

Matured in fine Pedro Ximénez and Oloroso sherry casks from Andalucía in Spain, this full bodied, richly sherried Highland Single Malt Scotch Whisky presents elegant and balanced layers of chocolate and spice carrying on into the long, lingering finish.
This expression was named the world’s best Highland Single Malt Whisky at the 2018 World Whisky Awards and is bottled at 48%, non-chill filtered and natural in colour.

- Nose : A delicate mix of ripe autumnal fruits – notably blackberries and red plums. Rich Oloroso sherry and candied orange segments. Spiced oatmeal biscuits and toasted oak fragrances bring excellent weight and balance.

Four Cask Matured, Natural Imparted Colour
This exquisite single malt has been crafted from peated spirit and four cask matured for at least thirty years in sherry casks, bourbon barrels, virgin oak casks and port casks from the Douro Valley. During long maturation Benriach’s sweet Speyside smoke mellows and integrates with the fruit, malt and oak. After thirty years, rich layering develops into sublime honeyed smoke, further enhanced through multi-layered cask maturation. The whisky from each cask type, imbued with particular flavour characteristics, is then expertly married together to create an exquisitely harmonious single malt, layered with dark fruits, rich walnut and velvety oak spice with a long, complex, smoked honey finish. All in perfect balance.
