Starward Octave Barrels is a single malt Australian whisky which has been fully matured in 100L wine barrels called āOctavesā. The Octave wine barrels, that inspired the name for this release, were sourced from Yalumba ā a family-owned Australian winery, located in the heart of Australianās famed Barossa wine region, and were used to produce their iconic Octavius Old Vine Shiraz.
Aroma: Rich, full bodied expression. Lots of red fruit, raisins, ripe peach, caramel and toasty oak.
Palate: Viscous and long, dark forest fruits, and a toasted oak backbone.
Finish: Toasted marshmallow.

Born and bred in Melbourne, Starward was inspired to create a spirit that reflects Its hometown ā from its culture to its famed āfour seasons in a dayā temperature swings. It is a city surrounded by some of Australiaās leading wine regions ā all within a dayās drive and is regarded as the microbrewing capital of Australia.
It seems obvious now that all the ingredients for a modern Australian whisky were close by, but in 2007, when we first started, the idea of an approachable, affordable Australian whisky ā served neat or as a cocktail with food ā was a big leap of faith.
While Australia had a well-established small-scale ultra-premium whisky scene, Starward pioneered an affordable, approachable and distinctly Australian whisky exclusively matured in Australian wine barrels.
The result is Starward. A modern Australian whisky, elementally matured for three āMelbourne years,ā that pushes the boundaries of what whisky can be.

- Colour : Intense cherry wood.
- Nose : Breathe in delightful waves of Victoria plum, bramble and strawberry jam with top notes of cherry blossom and honeysuckle on a base of sandalwood and ginger.
- Taste : Layers upon layers of rich fruits. Sip blackberry and roasted apple crumble with freshly baked gingerbread, developing into a baked orange and black cherry.
