Jayson Cabernet Sauvignon was harvested at night to deliver naturally cooled grapes to the winery. Whole clusters were gravity-fed onto a vibrating table for hand sorting. Selected clusters were gently de-stemmed, delivering whole berries for a final hand sorting. After several days of cold maceration, the fruit entered primary fermentation for two to three weeks, then gently pressed in our stainless-steel basket. The wine finished malolactic fermentation in barrel, then aged for 15 months in 88% new French oak barrels. Effusive aromas of blackberry pie, cassis, and leather greet the nose, foretelling the full, expressive palate. Intense notes of blackberry and plum interweave with flecks of pink peppercorn and plowed earth, amplified by a lift of fresh acidity. The tannins are firm yet seamlessly melded with the rich fruit, driving to a plush, juicy finish. Our 2018 Napa Valley Cabernet Sauvignon is a layered wine with notes of black cherry, blackberry and plum are complemented by hits of toasted oak, dried currant and baking spice. Fine grained tannins and ample brightness on the palate give way to a polished mouthfeel and exceptionally long finish. Upon arrival at the winery, the grapes were carefully destemmed and transferred to upright tanks for a two-day cold soak. To build its round, elegant mouthfeel, the wine saw 15 to 20 days of maceration time and was pumped over two to three times daily. Each lot was aged and meticulously evaluated separately, with the final blend taking place in May 2019. In total, the wine aged for 16 months in a combination of French and American oak barrels (40% new). Varietal: 100% Cabernet Sauvignon "A slightly high-toned red with walnut, berry, chocolate and spice on the nose and palate. Medium-to full-bodied with chewy tannins and a rich finish. At Orin Swift, we have been fortunate to have access to a wide range of vineyards across California. Luckily, this diversity of sources meant that the horrific fires of 2020 spared most of our fruit. Carefully tasted, tested and tasted again, we made sure any lots included in our 2020 wines were free of smoke taint. Abstract being one of our largest blends, we were diligent with the process of evaluating the wines; a patchwork of individual lots that retain some of their character but meld seamlessly together—like the collage—is why this wine is always a team favorite. Nose: The 2020 Abstract pours a neon purple splash and an opaque maroon core with dark aromatics upfront. Black plum, boysenberry and hints of bing cherry and lavender invite a taste. Palate: On the palate, the aromatics turn into the sense of taste along with a touch of dark chocolate and reduced blackberry. Supple drying tannins and a slight chalky texture close the wine with a calming finish. Waipara West Pinot Noir 2018

Estate grown on 3 blocks with differing soil structure, wind exposure and clones – early 1980’s selections from St Helena and more recent Dijon clones. The colour is an attractive, very bright ruby garnet with distinct crimson hues at the rim. Aromatically it is as striking as it is seductive. Bright red fruits - raspberry, strawberry and Morello cherry have immediate impact with an equally impressive array of oriental spices - anise and clove. Ripe seed aromas of almond kernel and cherry stone lift the nose. Time reveals an inner core of darker black cherry, and just a hint of bramble all kept in check by some very attractive yet subtle French oak. The palate is soft, silken and warm but with a certain nervosité which is to say that as a young wine it may appear both bright in acidity and forward in tannins, but that’s just for starters. Those are simply the framework in which the wine is cradled, the fruit depth is palpable, the Pinosity generous and its presence authoritative.

Similarly, the sensory introduction to Papillon is overwhelming and breathtaking; yet, as the wine opens, it transforms slowly into a wine of elegance and opulence in one. It is truly the epitome of our style of winemaking. The 2019 Papillon pours a neon crimson and settles into a dark core with a ruby rim—crimson through and through. Nose: Aromatically, the wine opens with powerful notes of blackberry, kirsch, coastal sagebrush and evolves into ripe pluot and roasted fig. Palate: An enveloping entry of grandeur, the palate reveals a more elegant side of the wine: black plum, blackcurrant, toffee and trace hints of sweet red vermouth, muddled mint, and orange peel. Polished, balanced and with an imagined sweetness, the wine closes with ripe but firm tannin and a mild drying character, capable of converting even the staunchest of Bordeaux-philes.
