Jayson by Pahlmeyer Cabernet Sauvignon 2017

Jayson Cabernet Sauvignon was harvested at night to deliver naturally cooled grapes to the winery. Whole clusters were gravity-fed onto a vibrating table for hand sorting. Selected clusters were gently de-stemmed, delivering whole berries for a final hand sorting. After several days of cold maceration, the fruit entered primary fermentation for two to three weeks, then gently pressed in our stainless-steel basket. The wine finished malolactic fermentation in barrel, then aged for 15 months in 88% new French oak barrels. Effusive aromas of blackberry pie, cassis, and leather greet the nose, foretelling the full, expressive palate. Intense notes of blackberry and plum interweave with flecks of pink peppercorn and plowed earth, amplified by a lift of fresh acidity. The tannins are firm yet seamlessly melded with the rich fruit, driving to a plush, juicy finish.

Winemaker Notes Our concept of small-lot winemaking dates back to 1948 when Louis M. Martini began ranking his most exceptional Cabernet lots to use for a special selection blend. We honor this attention to detail with every vintage we make, fermenting Lot No. 1 in small open-top tanks, which allow for a high level of precision when extracting color and flavor. All lots were alternately punched down and pumped over up to four times daily to build the desired foundation for the wineā€™s mouthfeel. Our barrel program for Lot No. 1 is also unique, with the primary component being 36-month air dried French oak. This longer drying time encourages rich tannin structure throughout the duration of the wineā€™s 19 months in barrel (83% new). Nose: The 2018 Lot No. 1 vintage showcases enticing aromas of wild blackberries, cocoa and toasted oak supported by notes of brown spice and humidor. Palate: The rich, plush palate boasts flavors of shaved chocolate and reduced blackberry compote with hints of cinnamon. The long finish reveals classic oak character and plush tannins. Our reserve Shiraz is sourced from vineyards in Greenock (35%), Ebenezer (35%), Seppeltseld (30%). Dense dark berry fruits, with hints of tobacco and cocoa are further enhanced by subtle use of oak. This wine has been matured in 28% new French oak hogsheads and the balance in 3 and 4 year old French oak hogsheads and American oak barriques for 17 months sur lie, resulting in a sexy, textured palate. And whoā€™s 2%? Moscatel! A splash of funk that supports the base line fruit, and puts the ā€˜phā€™ in fat. Colour: Dark plum Nose: Lifted black fruit aromas with a hints of earth and spice Palate: Rich, phat, dark berry fruits, with hints of dark chocolate and Indian ink, supported by a dense core of tannins. For the 2019 vintage of Amuse Bouche, it features the artwork by one the most prominent artists of our time. FranƧoise Gilot, born in 1921, is a decorated French painter perhaps best known for her long, stormy relationship with Pablo Picasso, with whom she had two children, Claude and Paloma. Gilot is highly regarded as an international artist of the second half of the twentieth century. She has exhibited her work for more than 50 years in the major art centers of Europe, Asia, and North America. She was awarded the French Order of Arts and Letters with rank of Commander in 1988, the French Legion of Honor with rank of Chevalier in 1990, and the rank of Officer in the National Order of Merit by the president of France in 1996. Amuse Bouche 2019 is crafted in the Pomerol-style, is a blend of 92% Merlot and 8% Cabernet Franc from our vineyards in the east Rutherford Hills of Napa Valley. Opus One was founded by Baron Philippe de Rothschild, legendary proprietor of ChĆ¢teau Mouton Rothschild, and renowned Napa Valley vintner Robert Mondavi. By combining the great winemaking traditions and innovations of both families, the foundersā€™ singular goal was to create an exceptional wine in the heart of Napa Valley. Opus One, like any great work, arose out of passion. Dedicated to uncompromised quality, Opus Oneā€™s sole purpose is to express this vision and passionate spirit for generations to come. VINTAGE 2o19 Abundant spring rains, nearly double the annual average, saturated the soil and provided ample water for the growing season. The first signs of budbreak were observed in the vineyard on March 27th; a full 15 days later than usual. This delay led to later bloom and veraison. However, warmer temperatures toward the end of summer accelerated the fruitā€™s development and maturity. Picking began on September 10th, a couple of days earlier than average. The harvest lasted four weeks, and activity in the cellar proceeded at a calm and steady pace. The Opus One 2019 has intense aromas of black plum, blueberry, black currant, and dried rose petals, accentuated by mineral undertones. The creamy, satiny texture is framed by finegrained tannins. The freshness and soft glow of acidity create a subtle tension with dark fruit flavors, savory herbs, espresso, and cocoa. A delicate dark chocolate bitterness lingers on the finish.
