Nicolas-Joseph’s 3 hectares are comprised of flat limestone rocks with red clay — yielding a fleshy, complex Pinot Noir with red fruits and sweet, silky tannins. Divided into two parts, Jeunes and Vieilles, this plot located alongside the north-eastern facade of the Château Marey-Monge displays the least calcareous soil structure in the Clos. Hand-harvested grapes, hand-sorted on a vibrating table. 100% de-stemmed, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in French oak barrels for aging on fine lees. Light filtration Tasting Notes: With a deep ruby color, our Nicolas-Joseph 2018 reveals a nose marked by floral aromas of fresh and faded roses, accompanied by ripe black fruit and sweet spices. The palate confirms the aromatic profile and unveils notes of cinnamon and clove. Our Chambolle-Musigny 2020 has a intense ruby color. The nose shows an elegant complexity and offers a lovely aromatic bouquet of black fruits, cherry and laurel. The palate is vibrant and flattering. The refined tannins bring a soft structure to the wine. Recommended Serving Temperature: 16°C

The pebble-rich and limestone soils of Volnay, rising between 230 and 280 meters above sea level, makes for a delicate, aromatic, and elegant Pinot Noir revealing the feminine profile of the appellation. Cultivated since the Middle Ages, the vineyard located on the steep slopes of the hill of Chaignot has always been a perfect fit for Burgundy’s native red grape variety. With a delicate nose of peonies, strawberries, raspberries and cherries, our Volnay 2017 shows a feminine profile. The palate reveals notes of pomegranate and sweet spices, such as vanilla and cinnamon, as well as silky and smooth tannins. With pronounced intensity and long finish, it is a Pinot Noir made for aging, that will evolve beautifully. Recommended Serving Temperature: 16°C

Nestled at the foot of the Château de Pommard, Simone is a 0.53 hectare plot of remarkable terroir that embodies the soul of our domain. With one of the highest internal surface of clay in Burgundy, her Pinot Noir is delicate and intense. Planted in 1986, her vines produce a rich, complex, and rare cuvée. Hand-harvested grapes, hand-sorted on a vibrating table. 100% whole-cluster, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in 20% new French oak barrels for 18 months of aging on fine lees. Light filtration. Tasting Notes: Deep, dark ruby color with hints of violet. The nose is electric and full of energy. Captivating aromatic bouquet of fresh roses, dried flowers, musk, undergrowth, and graphite. Famille Carabello-Baum and Château de Pommard are thrilled to reveal Simone 2018, the newest vintage of the estate’s iconic wine from the Clos Marey-Monge. With 1,800 bottles produced in the most generous years, Simone is the family’s rarest cuvée—available by allocation only. The delicacy, intensity, and structure of a red wine strongly depend on the quality of the internal surface of clay contained in the soil. The higher the internal density, the more a vineyard can produce grand cuvées. With an internal surface density of 736 square meters per gram, Simone holds Burgundy’s record, beating the greatest Grands Crus of the region. Why force Nature? Château de Pommard’s winemaker is convinced that this rich and intense Pinot Noir does not need human intervention to express itself fully. “Powerful and delicate, our Simone 2018 is adorned with a dark, deep ruby color and violet undertones.
