Yarra Valley, Australia
This wine was grown at our Highbow Hill Vineyard north of Yarra Glen township. The soils are sandy loam over clay and gravel over Yarra Valley mudstone. The Pinot Noir and Marsanne were planted in 1998.
Varietal: Pinot Noir 95%, Marsanne 5%
The colour is a clear light salmon, what the French would call “eye of partridge”. The nose has vibrant red fruit and spice aromas, and the palate is surprisingly weighty with juicy fruit flavours and savoury complexity enhanced by great texture. This wine is perfect for sipping on its own and will pair handsomely with a range of foods - pan fried rainbow trout with new potatoes, smoked salmon and cucumber sandwiches, sushi.

The 2019 season was warm and very dry. Harvest was early and meticulous attention to developing ripeness and harvest timing was rewarded with balanced fruit of great flavour intensity and fresh natural acidity.Winemaking
This wine is made with Pinot Noir grapes from our Highbow Hill Vineyard in Yarra Glen. The fruit was pressed gently and slowly, picking up just enough colour on the way. The wine had a short maturation in tank and older oak and is made to drink now while fresh and youthful.Tasting Note

Highbow Hill Vineyard is in planted on rolling hills north of Yarra Glen township. The soils are sandy loam over clay and gravel over Yarra Valley mudstone. The Pinot Noir vines were planted in 1998. The Yarra Valley is a cool climate wine region on river plains and rolling hills at the foot of the Great Dividing Range east of Melbourne. Vines were first planted here in 1838, just a few years after Melbourne was founded. After a short and promising heyday, dry wines fell out of favour and other rural industries dominated until the late-1960s, when a resurgence in winegrowing laid the foundations for today’s vibrant industry.Food Match

WINEMAKER’S NOTES
The grapes are harvested in the early morning to keep them bright and fresh. The fruit goes in whole cluster into the press and is then racked off to stainless steel tanks for cold fermentation before it is bottled.
2020 VINTAGE
An excellent harvest in the Casablanca Valley. The moderate temperatures during spring, without significant rains, allowed for good bud break and flowering. During summer there were no large diurnal temperatures, benefiting the ripening curve and helping maintain the freshness of the fruit in this zone. Harvest was pushed up by 10 days with respect to last year, and with lower yields that produced intense aromatics and flavors, producing fresh, intense wines with balanced acidity and a long finish.

Amuse Bouche Prêt à Boire Rosé 2021
Made in the southern French style, the 2021 Prêt à Boire Rosé is a Grenache and Syrah blend. Pale salmon pink in color, it offers beautiful aromas of potpourri, raspberry tart and fresh cherries, with hints of baking spices and cracked black pepper. It remains the only rosé produced in the US that garners 90+ point ratings from all the top wine critics.
Some of you may not be aware that the world lost George Rodrigue on December 14, 2013. He was 69 years old. George, and his wife Wendy, have been dear friends of ours since 2005 when we initially commissioned George to paint a "blue dog" for our 2006 Amuse Bouche release. A native of Louisiana, George launched his painting career in the 1960s. He was not only a magnificent artist; George was a true community leader, philanthropist and advocate of arts education, inspiring a new generation of artists through the George Rodrigue Foundation of the Arts.
