The Barossa is an amazing place with a diverse history from which a great community has grown living o- the Fat of the Land. Famed for its Shiraz vineyards, some dating back to the 19th century, the wines from this small, but proud region are as unique and divergent as its history and community. One can make such varied expressions of Shiraz, due to the different meso-climates of each subregion, the elevation range, and the myriad of soil types that are to be found throughout the Barossa. The Fat of the Land series seeks to showcase the sub regions of the Barossa, and the contrasting styles of Shiraz that can be made here. Shiraz from a single vineyard in Seppeltsfield.

Chateau de Pommard Marey-Monge Vivant 2016
Made from the young vines of the Clos Marey-Monge, Vivant is a fresh and fierce red wine that embodies its French name āaliveā.
Behind its clear, pale ruby colour, Vivant 2016 hides a youthful nose and palate full of strawberries, red cherries and sweet spices, such as white pepper. The finish is long, while the tannins are thin, crating a velvety texture. Alongside acidity and alcohol, they participate in creating a balanced and harmonious structure that enables the wine to age elegantly.

Chateau de Pommard Clos Marey – Monge āSimoneā 2016
Nestled at the foot of the ChĆ¢teau de Pommard, Simone is a 0.53 hectares plot of remarkable terroir. The delicacy and intensity of a red wine strongly depends on the quality of the internal surface of clay contained in the soil. The higher the density, the more a vineyard can produce grand cuvĆ©es. In 2009, Claude et Lydia Bourguignon, both agronomists and founders of the Microbiological Laboratory for Soils, conducted a thorough study on the Clos Marey-Monge and the Simone plot. What they found exceeded every expectation. With an internal surface of clay beyond 730 square meters per gram, Simone is close to the world record.
With only 1,800 bottles of this intense, rich and complex Pinot Noirāour rarest cuvĆ©e, produced in the most generous years, Simone is available by allocation only.
Powerful and delicate, our Simone 2017 shows a deep, dark and bright ruby colour with purple accents. The nose first reveals wild aromas of venison, underwood and elderberry, followed by notes of red roses, dry flowers and sweet spices. The palate is fresh, with a firm yet velvety tannic structure. With a long, vibrant and salty finale, this Pinot Noir shows an impressive depth that will still be there in 30 years from now.

Chateau de Pommard Chambolle Musigny 2017
Chambolle-Musigny is rooted in the shallow clay and limestone soils on the easterly slopes of the CĆ“te de Nuits, rising between 250 and 300 meters above sea level. Our Pinot Noir produced here is complex with soft tannins and a long finish. Once an adjunct to the CĆ®teaux Abbey, the vineyard gave its name to the village of Chambolle-Musigny, like 11 other climats throughout CĆ“te dāOr.
With its aromas and flavours of musk, red fruits, and dry flowers underlined by notes of sandalwood and game, our Chambolle- Musigny 2017 has a beautiful touch. While still in development, this velvet red wine with a long finish presents a delicate and silky texture, enhanced by well-integrated tannins. It is approachable now, with great potential for aging.
Chateau de Pommard Clos Marey – Monge āMicaultā 2018
Hand-harvested grapes, hand-sorted on a vibrating table. 100% de-stemmed, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in French oak barrels for aging on fine lees. Light filtration
A pure expression of a lightly oaked Pinor Noir, our Micault 2018 displays a deep ruby color. This cuvƩe features aromas of red fruit, fresh rose and peony, with a hint of blood orange. On the palate, the tannins are supple and savory. We also find a full-bodied side which leaves a juicy impression in the mouth. Enjoyable today, this Pommard will evolve gracefully over the next 10 years.

Chateau de Pommard Volnay 2017
The pebble-rich and limestone soils of Volnay, rising between 230 and 280 meters above sea level, makes for a delicate, aromatic, and elegant Pinot Noir revealing the feminine profile of the appellation. Cultivated since the Middle Ages, the vineyard located on the steep slopes of the hill of Chaignot has always been a perfect fit for Burgundyās native red grape variety.
With a delicate nose of peonies, strawberries, raspberries and cherries, our Volnay 2017 shows a feminine profile. The palate reveals notes of pomegranate and sweet spices, such as vanilla and cinnamon, as well as silky and smooth tannins. With pronounced intensity and long finish, it is a Pinot Noir made for aging, that will evolve beautifully.

Orin Swift 8 Years In The Desert Gift Set
Dark garnet with a lucid rim, the wine exhibits aromas of briar fruit, ripe blackberry and dark plum with a tinge of minerality and charred meat. Brawny on the entry, it has an equally big mid-palate with complex flavours of ripe brambly fruit, a touch of earth and notes of espresso bean. Still massive through to the finish with soft drying tannins, the unique varietal characteristics of the blend clearly reveal themselves over time.
