Starward Dolce

Dolce, a single, limited release, is a melding of juicy wine and oak characters with a flourish of sweet ‘Sicilian’ notes; marshmallow and cola. A twice distilled single malt spirit. Made with Australian barley and brewers' yeast for extra flavour. This Single Malt Australian Whisky was matured in Australian red wine barrels and then finished in barrels that held an Australian interpretation of a Sicilian Dessert Wine. It is the newest release from the Starward Projects, a program where distillers get to experiment with different whiskies and create flavour forward and unique expressions. That is why Dolce is unlike any released before. Intriguing marshmallow and cola characters melding with the Starward stamp of red wine barrel maturation, it is an embodiment of the Italian word for sweet; Dolce. This one's a stunning straight sipper, especially with a cheeseboard, after dinner or just as your dessert!
  • Nose : Dried fruits, toasted marshmallows and marzipan.
  • Palate : Initial sweetness on the front palate, rich dried fruits, brown sugar, cola and toasted marshmallows.
  • Finish : Palate is viscous, caramelised but enough tannin leaving a well-balance finish.

Kamiki Blended Malt Whisky

Kamiki is a new expression of premium Japanese style whisky blessed by Omiwa priests from Nara. Nara is the ancient capital of Japan and it holds many temples from Shinto, Tengri and Buddhist religions, which makes Nara «The City of Temples». Kamiki production is protected by Omiwa Temple priests. Omiwa is one of the oldest extant Shinto shrine in Japan over thousand years old and protecting local alcohol producers ever since. To celebrate the timeless alcohol tradition of the region, rare Japanese malt whiskies and finest malt whiskies sourced from rest of the world are blended and later fused with the highest quality pure spring water. Nara is covered with dense Yoshino Sugi (Japanese Cedar) forests. Yoshino Sugi is used to build temples, burnt in temples to calm mind and to age local alcohol products. Kamiki uses a unique second maturation technique, while blend is rested for a second time in Yoshino Sugi –Japanese Cedar- casks to capture a perfectly smooth taste, a scent of sandalwood on the nose and a zest of green tea in the finish. This second maturation makes Kamiki; “THE FIRST WHISKY IN THE WORLD WITH JAPANESE CEDAR CASK FINISH”! Kamiki name is derived from the Miwa Mountain (Mountain of God), which is protected by Omiwa Priests. Inspired by beautiful breezes coming from Miwa, the whisky is named KAMIKI, where KAMI means God and IKI means breath. Kamiki whisky has a smooth taste, complex flavor and driven by pure malted barley. There is no age statement on the product. At this time it was traditional practice in the Highlands to burn peat in the kiln towards the end of the barley malting, creating a rich and warm, earthy smoke. Starward Ginger Beer Cask is back, our most popular and sought after Starward Project to date. Now in its sixth release, this delicious single malt whisky is more expressive than ever and the team’s most experimental to date. The ginger beer recipe is a closely guarded secret by the distillery production team but includes huge amounts of ginger, lemongrass and citrus peel. The ginger beer was brewed inhouse and aged in EX Starward whisky barrels for 6 months before being disgorged. Our red wine and Apera casks were blended together before being finished in the ginger beer casks for over a further 6 months and bottled. Loaded with citrus peel and spicy ginger, it’s a zesty little number with aromas of dark chocolate and orange, with a palate of fiery ginger, fresh vanilla, and pineapple.

  • Colour : Deep amber with a cherry wood sheen.
  • Nose : A delicate mix of ripe autumnal fruits – notably blackberries and red plums. Rich Oloroso sherry and candied orange segments. Spiced oatmeal biscuits and toasted oak fragrances bring excellent weight and balance.
  • Taste : Resolute flavours of fine Oloroso sherry and bitter chocolate sauce, which has been spread liberally over homemade plum pudding. This is all infused with fabulous spicy notes – cinnamon, allspice and nutmeg. Full-bodied with smooth tannins.

Elegant spice, treacle toffee, rich sherry oak – with an endlessly complex finish. Matured exclusively in hand-selected sherry casks for a character-building quarter-century.
  • Color : Deep amber
  • Nose : Big notes of sherry-soaked fruit up front - raisins, figs and oranges. This is followed by wafts of toasted almonds and classic notes of old leather.
  • Palate : Vanilla and dark chocolate open up the palate. Sherry comes through yet again, but this time in the shape of rich, well spiced fruit cake. Hints of orange and oak round it off.
  • Finish : The finish lasts with notes of red fruits and cracked black pepper.

Dictador 2 Masters Nieport 1971/1974/1978/1980

Based on the flavour profiles of the vintages that he receives from Hernan Parra, Dirk Niepoort has made a unique blend, to make a singular rum. From one side before he put them in his own Port Pipes, he blended rums from 71 (49 years-old Rum) and 78 (42 Years-old Rum) and in another Pipe he blended 1974 (46 Years-old Rum) and 1980 (40 Years-old Rum), the pipes that he used are over 50 years Old Port Pipes and after 15 months he made a final blend between these two Pipes.
  • Nose : A mellow nose-feel. The top notes are of almond oil – highly fragrant - supported by dried fruits (dates, prunes, candied angelica), on a base of marzipan glazed with hard toffee and dipped in dark chocolate. A suggestion of espresso coffee in the development.
  • Palate : A smooth texture and a taste which starts sweet and dries elegantly to a long, warming, lightly spicy (black pepper) finish, with a trace of espresso coffee and crystalline sugar (and later dark chocolate) in the aftertaste.
  • Colour : Deep polished rosewood, with magenta lights.
