Hand-harvested grapes, hand-sorted on a vibrating table. 100% whole-cluster, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in 20% new French oak barrels for 18 months of aging on fine lees. Light filtration. Famille Carabello-Baum and Château de Pommard are thrilled to reveal Simone 2018, the newest vintage of the estate’s iconic wine from the Clos Marey-Monge. With 1,800 bottles produced in the most generous years, Simone is the family’s rarest cuvée—available by allocation only. The delicacy, intensity, and structure of a red wine strongly depend on the quality of the internal surface of clay contained in the soil. The higher the internal density, the more a vineyard can produce grand cuvées. With an internal surface density of 736 square meters per gram, Simone holds Burgundy’s record, beating the greatest Grands Crus of the region. Why force Nature? Château de Pommard’s winemaker is convinced that this rich and intense Pinot Noir does not need human intervention to express itself fully. “Powerful and delicate, our Simone 2018 is adorned with a dark, deep ruby color and violet undertones. Some of the oldest vines in Clos Marey-Monge, Chantrerie’s 2.41hectares of marly-clay soils produce a dark, rich and deep PinotNoir with a sweet palate. Known as the spirit of our vineyard, this old Lady benefits from one of the largest internal surfaces of clay in the Côte d’Or, worthy of a Grand Cru, just behind Simone’s record. Hand-harvested grapes, hand-sorted on a vibrating table. 100% de-stemmed, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in French oak barrels for aging on fine lees. Light filtration. Tasting Notes: Behind its intense ruby-purple color, our Chantrerie 2018 hides an aromatic bouquet marked by flowers and black fruits, revealing the feminine side of Pommard. On the palate, the tannins are dense and velvety. Lively and energetic, this exceptional cuvée has a long, mineral finish with saline notes. The largest monopole in Burgundy, Clos Marey-Monge benefits from a unique environment, protected by a two-meter stone wall. Positioned at the base of the Pommard hill, the complexity of our vineyard’s soils come from the alluvial, sand and gravel carried along by the Avant-Dheune river thousand years ago. Thousands of years ago, an underground spring flooded the 0.85 hectare of 75 Rangs with minerals. Planted in 1962 and 1964, this plot located at the lowest topographic position in the Clos Marey-Monge benefits from shallow and limestone-rich soil that produces a Pinot Noir rich in minerals with a salty finish. The 75 rows of the eponymous plot allow us to develop a wine with a ruby color, reputed to be the backbone of our Clos Marey-Monge Monopole. Tasting Notes: Its nose reveals aromas of rose and red fruit highlighted by iodine and mineral notes. The palate is fresh and deliciously chiseled. The tannins are silky and the wine's airy side is reinforced by a singular salinity. With its saline, mineraly finish, our 75 Rangs 2018 stands out as a refined wine built for aging. Recommended Serving Temperature: 16°C "Sandalwood, rose petals and charred mesquite perfume this bottling sourced from 75 rows of vines situated in the lowest topographic position of the Clos Marey-Monge. A touch softer and richer in fruit ripeness than the producer's “Monopole” bottling, it offers plush roasted-plum and black-cherry flavors lifted by tart blackberry acidity and a chalky, salty limestone finish. The vintage A mild winter preceded a hot and humid spring, encouraging early vine budding. The hot and dry conditions recorded from mid-June were offset by salvaging rainy spells in mid-August, ensuring the berries’ proper ripening. The alternation of sunny days and cool nights in September was ideal for achieving optimal maturity. The winemaking and ageing The manually harvested grapes undergo a bespoke winemaking process in the estate’s plot-based fermenting room. Ageing is carried out in barrels (of which 40% are new). Blend The 2020 Amiral de Beychevelle is made from a blend of Cabernet Sauvignon (54%), Merlot (42%), Petit Verdot (4%) and Cabernet Franc (1%). Tasting Notes Nose: The expressive nose seduces with its floral fragrances, wherein notes of violet dominate. Palate: The beautifully fresh palate seduces with its powerful and silky tannins as well as its union of fruity (red fruits) and spicy aromas.

Rimapere pinot noir comes from a single vineyard ideally located on the prestigious Rapaura Road, in the Wairau Valley, in the heart of the Marlborough region. This area’s cool climate and stony soil are perfect for ripening high-quality pinot noir. The name Rimapere, meaning “five arrows » in the Maori language, pays a dual tribute to the Rothschild family’s emblem and the traditional local culture.

• Winemaking: Cold soak (7C) for a week in temperature controlled stainless steel open top tanks. Part of ferments had whole bunch inclusion. Ferments for a week with indigenous yeasts with pumping over and gentle hand punching. One week post ferment maceration.
• Soil type: Rapaura Series, Stony Soil free draining, with a small Silty top layer
• Varietals: 100% Pinot Noir
• Food and wine: Can be enjoyed on its own as an aperitif, or with white meats (chicken), veal, and meat with a sauce (truffle, morel), or cheese.

Purple colour. The nose is decidedly fruity; the hints of cherry in particular stand out. On the palate it is soft, enveloping and pleasantly balanced. Food Pairing: Excellent in combination with first courses with meat sauce, it also goes very well with roasts and grilled dishes.
