It is widely considered one of Australia's finest examples of what the variety is capable of. The fruit is all biodynamically grown and picked by hand, with only 60% of juice pressed. It's fermented with wild yeasts, and left for 7 months on lees in barrel where it undergoes further stirring for added texture and complexity. An organically grown high-quality example of this popular Rhone white variety. Textural and highly drinkable.

Our 2018 Monte Rosso Vineyard Cabernet Sauvignon is a slice of history in a glass. We gathered the fruit from a selection of our favorite blocks in our historic Monte Rosso Vineyard, including the oldest Cabernet Sauvignon block in California. The nose fills with Monte Rossoā€™s signature spice and sweet wood aromatics and a thread of smoky ancho. Notes of ripe cherry, black currant and warm plum compote fill the palate. Underlying hints of sarsaparilla and caramelized oak lead to a long, earthy finish with a touch of wet clay. Varietal : 100% Cabernet Sauvignon "Ripe, focused and nicely structured, this full-bodied wine wraps delicious, tangy red cherries and plump black cherries in rather firm tannins, keeping them fresh for longer aging. The Juyondai Shichitare Nijjukkan Junmain Daiginjo sake is a premium sake that is considered as one of the rarer series of rice wine in Japan. It is highly sought after as the production for this sake is considerably less than those of other kinds of sake.

Utilising the special technique created by Takagi Shuzo, 75kg of rice water is used, extracting sake after pressing the bag 7 times and allowing it to drip from the bag.Ā  This time consuming method and small amount of sake collected each time make this sake very are and limited. Polished to 35%, the sakeĀ excuses a velvety textureĀ amidst its richness. Ā 

With a ginjyo aroma of ripe melon and white peaches, the sake is beautifully layered with delicate fragrance.
