The color of this wine is orange pink. The calm and regular effervescence gives birth to a sustained and delicate cord whose bubble is very fine.
On the nose, this wine is powerful, fruity, developing aromas of strawberry, raspberry, sour cherry and floral notes of peony with a vanilla finish. This bouquet of fruit is supported by slight notes of almond, cinnamon, honey and wood. Length, complexity and balance define a mouth in harmony with the nose.
We note a beautiful purity, an excellent finesse on the palate with a creamy texture that allows us to discover an elegant wine with and beautiful vinosity. In the mouth, very refreshing, reminiscent of pomelos on the finish.
Wine and food pairing
This cuvee is appreciated with refined dishes, such as salmon in strawberry foil or fried langoustines. It can also be served with a fillet of red mullet, or even a rib of lamb marinated with vegetables. DAN Yamahai Junmai Daiginjo (Bizen Omachi)

TUSCAN TRADITION
2019: a balanced and late vintage. A cold and sunny winter was followed by a spring characterized by low average temperatures and heavy rainfall, which contributed to the creation of important water reserves in the soil. The reduced sunlight coupled with the heavy rainfall resulted in a slight delay of about ten days in the vegetative cycle of the grapevines. The flowering phase took place in early June, after which the growing season continued regularly with a hot summer free of excessive temperatures and some rainfall occurring between late July and early August, which supported a vigorous and efficient growth of the leaves. The mild temperatures in September and the good water reserves supported a slow and regular ripening of the grapes, which resulted in perfectly ripe, highly intense tannins rich in aromatic freshness. The harvest began with a sunny climate on September 12 with the first Merlot grapes, continued with Sangiovese in late September and early October. The wines are structured showing balance, vigor and great aging potential. Luce 2019 has an intense ruby red color. The nose is striking with its floral hints of violet and rose accompanied by red fruits such as raspberries and sweet spices. In the mouth, the wine is balanced and elegant with an almost creamy texture supported by silky and well-integrated tannins. Spicy notes accompany the persistent finish. The 2019 growing season was very dry, which resulted in incredibly low yields. We had a relatively warm lead up to the ripening period, which produced a very condensed and fast harvest. With Roussanne being a late ripening variety, it faired very well in a season like this, giving rise to concentration, freshness of flavor and marked natural acidity.
Hand-picked from Block 6 (1.0 ha) on March 16th, our oldest Roussanne planting which is now 15 years old. 50% is destemmed, crushed, and filled to 675L ceramic eggs, where it is fermented and remains on the skins for 193 days. The other 50% is pressed into ceramic eggs and fermented off of the skins. The final blend was 40% extended skin batch and 60% without skin contact. Kokuryu Fuku Daiginjo Yamadanishiki
This Daiginjo-shu is best drunk warm. Ā While premium Daiginjo are usually not drunk warm, Kuzuryuu Daiginjo was created in 2004 as a Daiginjo specially for warm sake. Enjoy it warm for a deep, refined flavor that has matured over time. It has a gorgeous aroma characteristic of daiginjo-shu, and an elegant and delicate aroma.
Recommended way to drink: 5Ā°C to 10Ā°C
Tasting Notes: Intense and concentrated ginjo aroma, clear and delicate flavour with hints of sweetness on the palate, medium bodied.

Tanaka Shuzo Tokubetsu Junmai Shu Chateau Shirasagi 65
Displays elegant nose with papaya aromas on the front and notes of fennel, vegetal, white radish, turnip. Ā On the palate, it is round and smooth with yellow fruits, apricot, melon and exotic fruits. Recommended to serve at 14ā in a wine glass, and pair with Spanish Paella with gambas.
