Our fruit was harvested by hand at the end of February then whole-bunch pressed and settled in tank before transfer to tank and barrel for fermentation. The wine underwent a partial malolactic fermentation and was aged for 10 months ā part in stainless steel tank to retain fresh fruit flavours, part in barrel for added complexity. We used a mix of old and new French oak barrels.
Crisp & Refreshing, White, Medium-bodied wine. Great with river trout, Asian style dishes, roast chicken.

Jack Danielās Old No. 7
Mellowed drop by drop through 10-feet of sugar maple charcoal, then matured in handcrafted barrels of our own making. And our Tennessee Whiskey doesnāt follow a calendar. Itās only ready when our tasters say it is. We judge it by the way it looks. By its aroma. And of course, by the way it tastes. Itās how Jack Daniel himself did it over a century ago. And how we still do it today.
Nose: Caramel with mild hints of banana
Taste: Balanced caramel, vanilla and toasted oak, medium bodied.
Finish: Creamy/Clean finish
Woodford ReserveĀ® Very Fine Rare Bourbon
In the 1830ās our Woodford County distillery was the setting for a series of discoveries and innovative practices that would define the bourbon industry for generations to come. For this 2020 Masterās Collection release Master Distiller Chris Morris and Assistant Master Distiller Elizabeth McCall have drawn upon the rich history of that time and their own careers for inspiration.
Local newspapers from the 19th century highlighted auctions of highly aged Bourbon barrel lots as being āVery Fineā and āRare.ā The very rare barrels of Woodford Reserve featured in this Masterās Collection date back to the first year Morris became our Master Distiller. He and McCall have held them back from inclusion in their standard batching process to inaugurate this new package.
āDue to the heat-cycled warehousing at Woodford Reserve our product yield is extremely low. This makes a longer aged product at Woodford Reserve an extremely difficult accomplishment and therefore something that is quite rare.ā ā Elizabeth McCall
The result is the Fall 2020 Masterās Collection release named Very Fine Rare Bourbon, a rich and darkly robust expression of Woodford Reserve Bourbon.

Kokuryu Daiginjo Ryu
After the founder returned from France, he applied wine aging to sake and released it in 1975. At the time, it was the most expensive sake in Japan, which was a turning point for the brewery. It was also the first in the industry to use the now-common expression "Daiginjoā. At that time, a label with a dragon stamped in gold foil was used on the sake bag used to press the sake.
THis Daiginjo is fruity and soft with the notes of apple, peach, melon and strawberry. Fermented at low temperature, it is mellow with pleasant acidity and umami. Mildly dry and crisp, it is easy-drinking and delicious. REMARKS: The sake has been pasteurized, so it can be delivered at room temperature. However, cold temperature is suggested for long-term storage.
Recommended way to drink: 5Ā°C to 10Ā°C
Tasting Notes: Well-rounded, gently aromatic and surprisingly incisive.

Handpicked Capella Vineyard Pinot Noir 2017
Mornington Peninsula, Australia
The 2017 vintage on the Mornington Peninsula was a classic one in which overall mild and stable conditions produced superb quality fruit and wines of great balance, finesse and longevity. Dubbed by some a āGoldilocksā vintage, 2017 delivered just enough and not too much of everything. Vines ripened slowly, building great depth of flavour while retaining fine balance in sugar and acid. Harvest began in early-March, a little later than the long-term average, and somewhat of a relief after the record-early vintage of 2016.
Fruit from select blocks at Capella Vineyard is handpicked, destemmed, and sorted by hand to ensure only the finest berries make it into this beautifully perfumed, supple and silky wine. The aromas are classic Pinot Noir ā cherries, strawberries, and earthy spice - with the purity and perfume we have come to expect of Capella Vineyard. The palate combines power and grace with great texture and silky-smooth tannin.
Recommended Serving Temperature: 15-17Ā°C
Food Pairing: Peking Duck, Roasted Quail, Mushroom Risotto
