Vinification: fermented in stainless steel and concrete temperature-controlled vats at 30°C. The vatting lasts between 20 and 25 days.
Ageing: 14 months (75 % in 12 months barrels previously used for Ch. Beychevelle and 25% in new oak)
Bottling: at the chateau
Tasting Notes: Soft, elegant and fruity with excellent depth and breed. With Amiral, the objective is to make a wine which can be drunk earlier than the Grand Vin (with more Merlot). Ideally consumed after 3-7 years of ageing.
Food Pairing: This wine will perfectly accompany flavourful (red or white) meat dishes such as grilled lamb chops, braised shanks and meat stews. Also harmonious with most cheeses like Gruyère, Comté, Cantal, Reblochon, Beaufort … (avoid Roquefort and arguably Camembert). And of course, will also easily and gracefully accompany more simpler dishes like pizza and/or most barbecued foods.
Wine Spectator: Amiral de Beychevelle 2010 (90pts) Offers a juicy feel, offering a lightly roasted cedar frame to the dark plum, blueberry and blackberry fruit flavours, with a ganache-coated finish. Approachable now, but no need to hurry. Best from 2014 through 2024. – James Molesworth

Handpicked Collection Chardonnay 2016

Opening with stone fruit and floral aromas with bright citrus notes, this wine has layers of fruit flavour and creamy complexity derived from 11 months aging on lees in barrel.
Vintage 2016 was marked by warm and dry conditions and the Mornington Peninsula harvest was one of the earliest on record. It arrived in a hurry too and many vignerons were picking in early February. The resulting wines have excellent flavour and weight and tend be earlier drinking styles.

Lively aromas of blackberry, blueberry and dried cherry intertwine with vanilla and cedar notes. A smooth silky texture with fine tannins and balance, providing a beautiful and lingering finish. 100% Cabernet Sauvignon.
The Primus vineyards are located on the third alluvial terrace of the Alto Maipo, at the foot of the Andes Mountains. The grapes are hand-picked, double sorted, fermented in open top tanks with native yeasts, and left on the skins after fermentation to gain structure and depth. The best lots of the vintage are selected, blended and aged in French oak barrels for 12 months.

Primus Carménère 2017

Red fruit aromas, with cedar and boldo notes. On the palate it is fresh and fruity, with flavors of cherry and hints of pepper and rosemary. Silky, with velvety tannins and great mouthfeel.
There was little rainfall during the season, concentrated in the winter months. Temperatures rose significantly near the end of spring, with record high temperatures, and the beginning of harvest was unusually early. The grapes were harvested with optimum ripeness, giving way to wines of great concentration and flavor intensity, and excellent balance between acidity and tannins.

Grand Bateau Blanc 2018 by Chateau Beychevelle

Aromatic to the nose with notes of buttery-vanillin oak flavours and exotic fruit (orange rind and honeyed grapefruit). On the palate, the wine is round, fleshy with wonderful minerality and again, delightful exotic fruit flavours. The new-oak flavours are present. Very nice balance between the oak, fruit and acidity. Excellent finish.
100% Sauvignon Blanc. Harvest is done 100% by hand. Following a skin-contact maceration, 75% of the juice is fermented in vats and 25% in oak-barrels. During this ageing period, “batonnage” is carried out. After blending and filtration, bottling is carried out in late spring following the harvest.
