Winemaking Notes
To retain the natural characteristics of each varietal, we fermented the blend at cool temperatures. The Pinot Grigio, Viognier and Riesling were fermented 100% in stainless steel tanks to preserve delicate fruit aromas. Select lots of Chardonnay were fermented and aged on oak to add a touch of vanilla characteristics. A small portion of the blend was selected for malolactic fermentation, which enhanced character and mouthfeel.

Waipara West Pinot Noir 2018
Estate grown on 3 blocks with differing soil structure, wind exposure and clones – early 1980’s selections from St Helena and more recent Dijon clones. The colour is an attractive, very bright ruby garnet with distinct crimson hues at the rim. Aromatically it is as striking as it is seductive. Bright red fruits - raspberry, strawberry and Morello cherry have immediate impact with an equally impressive array of oriental spices - anise and clove. Ripe seed aromas of almond kernel and cherry stone lift the nose. Time reveals an inner core of darker black cherry, and just a hint of bramble all kept in check by some very attractive yet subtle French oak. The palate is soft, silken and warm but with a certain nervosité which is to say that as a young wine it may appear both bright in acidity and forward in tannins, but that’s just for starters. Those are simply the framework in which the wine is cradled, the fruit depth is palpable, the Pinosity generous and its presence authoritative.
Tsukiyoshino – Junmai Ginjo-Shu
Recommended serving temperature for this sake with gentle and mellow tasting sake is from room temperature to cold. Due its characteristics, it does not overpower flavour of dishes and is hence suitable for most occasions both as aperitif and pairing with dishes. This sake has mild melon aroma and slight sweetness in taste.

Akkeshi Blended Whisky Shosetsu
Akkeshi Blended Whisky SHOSETSU (小雪) is the 13rd in the 24 Season Series.
"Shosetsu" refers to the time of year when the sunlight weakens, autumn leaves begin to fall, and snow begins to fall on the mountains and other areas. Full-blown winter is just around the corner, and the cold gradually becomes more severe. It is necessary to be prepared for winter. This is considered a guideline for preparing for the end of the year.
The golden leaves of the deciduous pine trees in the mountains are about to fall. The pure white whooper swans that fly to Lake Akkeshi invite the first snowfall. The end of the year is filled with smiles as people warm themselves with a glass of peatcovered whisky from Akkeshi.
