Deep dark with lighter shadows, flavors are quite complex and the progression of different fragrances is endless, beginning with smaller black and red fruits, all surrounded by a hidden scent of blackberries and brackish water. Our vineyards on the western slopes are surrounded by a fresh forest and very close to the Ombrone river. This means that they can handle well warmer seasons, like 2018. This is why the wine was able to maintain a nice dynamic taste, light without it being too sweet. The structure and texture of it are making us hope for great aging potential.

Food Pairing: Grilled meat of any kind, aged cheese, pizza, pasta, casseroles, mild game dishes.

About brand

Established in 1998 by Francesco Illy, heir to the famous Illy coffee empire family, this winery is made up of 75 acres of biodynamic vineyards that are set across two opposite mountainsides and nestled between a forest, olive groves, a vegetable garden, and fruit trees. Located in the stunning Tuscan landscape of Montalcino, the views from the winery are breath-taking, taking in great swathes of the surrounding landscape.

Beginning back in 1998 with the site in Castelnuovo dell’Abate on the eastern side of Montalcino, the winery was since expanded in 2017 to an additional site at Il Galamppio for vineyards on the western side. Both sides boast uncontaminated oceanic soil, but with each belonging to different geological areas, as well as pure air, all of which gives the vineyards optimal conditions to grow the ideal raw ingredients necessary to produce delicious wines.

Vintage 2016 was marked by warm and dry conditions and the Mornington Peninsula harvest was one of the earliest on record. It arrived in a hurry too and many vignerons were being picked in early February. The resulting wines have excellent flavour and weight and tend to be earlier drinking styles.

This fruit was hand harvested in late March in a selection of our vineyards; the majority was from the Wilyabrup sub-region and there was a parcel from Carbunup. The wine was aged in French oak barriques, 30 per cent new, for 15 months.

Nestled at the foot of the Château de Pommard, Simone is a 0.53 hectares plot of remarkable terroir. The delicacy and intensity of a red wine strongly depends on the quality of the internal surface of clay contained in the soil. The higher the density, the more a vineyard can produce grand cuvées. In 2009, Claude et Lydia Bourguignon, both agronomists and founders of the Microbiological Laboratory for Soils, conducted a thorough study on the Clos Marey-Monge and the Simone plot. What they found exceeded every expectation. With an internal surface of clay beyond 730 square meters per gram, Simone is close to the world record. With only 1,800 bottles of this intense, rich and complex Pinot Noir—our rarest cuvée, produced in the most generous years, Simone is available by allocation only. Powerful and delicate, our Simone 2017 shows a deep, dark and bright ruby colour with purple accents. The nose first reveals wild aromas of venison, underwood and elderberry, followed by notes of red roses, dry flowers and sweet spices. The palate is fresh, with a firm yet velvety tannic structure. A stripped-back Chardonnay style that showcases the fruit from our site while still being rich in subtle complexities. We achieve this using large, berried Chardonnay clones, whole bunch pressing, minimal use of old oak barrels, extended time on yeast lees and no malolactic fermentation. Three qualities define this wine - above all else, the first being the fruit aroma/flavour, which we want to be subtle and pure. Acid structure is the second propping up the wine and giving it a salt crunch. Yeast derived aroma/flavours and mouthfeel provide balance. Color: Pale golden kiwifruit in colour with hues of green and silver. Aroma: On the nose, this wine is truly multi-layered however, all of them are understated. Fresh pineapple and sea salted cracker at first, perfumed white flower and white tea in the centre, all sitting on a base of malt toffee. These aromas combine and evolve into a vast number of flavours in the mouth. Palate: Ripe peach and lemon meringue define the taste, due to a combination of full-bodied mouthfeel, cleansing acidity and a bite on the finish. A rich complex wine. Food Pairing: Pork. Once an adjunct to the Cîteaux Abbey, the vineyard gave its name to the village of Chambolle-Musigny, like 11 other climats throughout Côte d’Or. With its aromas and flavours of musk, red fruits, and dry flowers underlined by notes of sandalwood and game, our Chambolle- Musigny 2017 has a beautiful touch. While still in development, this velvet red wine with a long finish presents a delicate and silky texture, enhanced by well-integrated tannins. It is approachable now, with great potential for aging.
