‘L’Antique’ was created 30 years ago, and is one of my very first Sancerre cuvées. The grapes come mainly from the best Silex hillsides in the village of Saint-Satur. For this cuvée, I wanted to follow my grandfather’s footsteps by making an unclarified, slightly filtered wine, allowing the elegance of the terroir to shine through to the full.
Age of the vines: ~35 years old
Soil: 90% Flint of St-Satur, 10% Terres Blanches of Thauvenay
Vinification: The grapes are from a careful selection of Sauvignon Blanc old vines grown in St-Satur. All of my parcels are treated to the utmost core and attention prior to harvesting so as to ensure optimum aromatic maturity. The juices are pressed slowly and gently at the domaine and therefore naturally concentrated in aromas. Vinification ends with cold stabulation for 8 days and fermentation at controlled temperatures of l6-18°C.
