The fruit goes in whole cluster into the press and is then racked off to stainless steel tanks for cold fermentation before it is bottled. 2019 VINTAGE An excellent harvest in the Casablanca Valley. The moderate temperatures during spring, without significant rains, allowed for good bud break and flowering. During summer there were no large diurnal temperatures, benefitting the ripening curve and helping maintain the freshness of the fruit in this zone. Harvest was pushed up by 10 days with respect to last year, and with lower yields that produced intense aromatics and flavors, producing fresh, intense wines with balanced acidity and a long finish. Mornington Peninsula, Australia Opening with stone fruit and floral aromas with bright citrus notes, this wine has layers of fruit flavour and creamy complexity derived from 11 months aging on lees in barrel. Vintage 2016 was marked by warm and dry conditions and the Mornington Peninsula harvest was one of the earliest on record. It arrived in a hurry too and many vignerons were being picked in early February. The resulting wines have excellent flavour and weight and tend to be earlier drinking styles.

Our 2017 Alexander Valley Cabernet Sauvignon is a boisterous wine with an assertive profile, offering ripe notes of black currant, plum, crushed fennel and cedar. Grapes were picked early in the morning to preserve maximum flavor en route to the winery. All lots were aged and evaluated separately, allowing us to craft a harmonious wine before marrying the final blend in barrel to finish aging. In total, the wine spent 17 months in a combination of French and American oak (29% new). They are lighter in colour than Ruby Ports and combine the fruitiness of young wines and the nuttiness derived from the maturation in seasoned oak casks. A bright reddish tawny colour. On the nose Cockburnā€™s Fine Tawny has light and crisp fruit aromas balanced with a nutty toffee mellowness achieved through its maturation in oak casks. On the palate itā€™s elegant and well balanced, with a smooth and subtle long finish. Cockburnā€™s Fine Tawny is the perfect accompaniment to rich creamy desserts and dried fruits but is also wonderful enjoyed on its own or as part of a long drink. It does not need to be decanted and should be consumed within four weeks of opening. Serve slightly chilled.
