The Primus vineyards are located on the third alluvial terrace of the Alto Maipo, at the foot of the Andes Mountains. The grapes are hand-picked, double sorted, fermented in open top tanks with native yeasts, and left on the skins after fermentation to gain structure and depth. The best lots of the vintage are selected, blended and aged in French oak barrels for 12 months.

Starward Fortis Miniature
Fortis meaning ābrave, boldā, is a full bodied, full flavoured whisky that celebrates local Australian ingredients. Bottled at a higher ABV of 50% and non-chill filtered, this whisky
is fully matured in 100% American oak red wine barrels, predominately sourced from the Barossa Valley.
These barrels, which previously held big Australian bold reds like cabernet and shiraz, offer a fuller and richer mouthfeel to this single malt whisky. Starward Fortis is blended in batches, meaning each batch will be unique but will maintain the core flavour profile and intensity.
Nose: Very forward aromas of Madagascan vanilla pods, rich toasted American oak, blackberry jam, raisins, caramelised fig, raw sugar and over ripe plums.
Palate: Rich and full bodied, upfront vanillin, quince paste, Muscadelle raisins, chocolate ganache, cinnamon and baked banana bread.
Finish: Viscous and long. It really captures the whole palate and balances well with a finish of baking spices from the oak and ripe figs and raisins.

Nose: Like we took bright flavours of red berries and orchard fruit and coated them in soft oak spice.
Palate:Ā Imagine a rich red berry pudding covered in vanilla, caramel and spice.
Finish:Ā Balanced and long. The sweetness fades and the delicious flavour goes on.
Tanaka Shuzojo Junmai Daiginjo Shirasagi no Shiro Kotobukikame
Clear and very bright, with reflections blue-silver. The nose is purity, great precision, notes of chalk, white rock, flowers of acacias, very beautiful definition.
The mouth is surprising in structure and presence and contrasts with the nose; nice volume and beautiful mineral presence that even provokes a perception of fine and delicate bitterness that brings relief to the end of the mouth
Pairing : a royal lobster ,Farmhouse and half cooked, for a great moment of gastronomy.

Starward Octave Barrels
Starward Octave Barrels is a single malt Australian whisky which has been fully matured in 100L wine barrels called āOctavesā. The Octave wine barrels, that inspired the name for this release, were sourced from Yalumba ā a family-owned Australian winery, located in the heart of Australianās famed Barossa wine region, and were used to produce their iconic Octavius Old Vine Shiraz.
Aroma: Rich, full bodied expression. Lots of red fruit, raisins, ripe peach, caramel and toasty oak.
Palate: Viscous and long, dark forest fruits, and a toasted oak backbone.
Finish: Toasted marshmallow.

It is a single-varietal Garnacha aged for 18 months in new French oak barrels. It has an intense garnet red color, in the nose it is complex with typical notes of the Garnacha variety, and in the mouth, it is balanced, fresh and fine. It goes well with many meat dishes, from roasted or grilled lamb, white meats with strong sauces, to aromatic and hearty meat stews and pork, lamb, duck, or pheasant stews.

It is made from the Tempranillo, Garnacha, Mazuelo and Graciano grape varieties, aged for 30 months in French oak barrels and then remained in the bottle for 36 months before being marketed. On sight it has a ruby āāred color, on the nose it is elegant with notes of ripe fruit and toasted touches, and in the mouth, it is tasty, long, and persistent. Ideal to accompany roasted red and white meats, Iberian sausages, and risottos.

Vibrant and aromatic, with citrus aromas of lime and tangerine, blended with subtle floral notes. Smooth and fresh, this Sauvignon Blanc has a great mouthfeel and a long finish.
Grapes are harvested at night to maintain fresh and bright acidity. The fruit goes straight to the press, where the juice sits for 24 hours. Then it is racked and separated from its gross lees and fermented clean at a low temperature in stainless steel tanks, ensuring multilayers of aromas and flavours.

Dictador 2 Masters Ximenez-Spinola 1976
A 45 year-old Dictador Rum from a 1976 vintage finished in whisky casks was shipped to Jerez de la Frontera in the hot south of Spain. There the rum was matured for 9 months in 50 year-old French Oak Pedro Ximenez casks.
- Nose: A profound and mellow nose-feel, lightly nose-drying. The top notes are of Christmas cake with burnt edges, with toasted flaked almonds, becoming gamey and meaty after a while (roast grouse). The mid-notes are both fruity (old Madeira) and floral - a heady, scented fragrance of tropical lilies on a hot night. The base note is reminiscent of burnt toffee.
- Palate: A creamy, mouth-filling texture and a sweet taste overall, with treacle toffee in mid-palate and a suggestion of wine-marinaded and glazed pork. Then a perfumed finish, pleasantly mouth-cooling with lingering warm spice.
- Colour: Deep polished rosewood, with crimson lights. Slow, thick legs, indicating texture.

Juyondai Soukou
This Sake is named after a double rainbow, it is a Shizuku Drip Sake, made using the highest grade Yamadanishiki, polished to 35%, and brewed using ultra low temperature method. It is a namazume.
The sake is described as juicy, fruity with a rich mouthfeel and excellent balance. This is one of the highest grade and highly rated Juyondai.

Dassai Junmai Daiginjo 23
To craft the ultimate Junmai-Daiginjo sake, we polished down Yamada-Nishiki rice to 23%. Delivering delicate floral aromas with a palate reminiscent of honey and an elegant lasting finish.
Produced by Asahi Shuzo Brewery, Dassai 23 is a premium sake of junmai daiginjo type, which means that the rice used has been polished to more than 50% and no alcohol has been added. As its name suggests, this premium sake has a remaining grain percentage of 23% so that only the noblest part of the grain remains; the heart.
Rich in fruity aromas of ripe fruit, apple and pear and with great finesse, Dassai 23 is an ideal introduction to traditional Japanese beverages and goes very well with raw or cooked foods such as red meats, cheeses and desserts.
Sake or nihonshu is a Japanese alcoholic beverage of 14 to 17% by volume, made from a mixture of water, yeast and steamed rice, a small part of which has been inoculated with a microscopic fungus, the koji, to allow for better fermentation.
