The Complexity of a Vintage Champagne Rosé

  • Blending composed of 60 % Pinot Noir (“Rosé de Saignée”) and 40 % Chardonnay classified Premier Cru and from vines of sixty years old age
  • Manual harvest 2014
  • Aging process: ten months in oak barrels of 228 litres
  • Sixty months on lies in the cellars after bottling
  • No malolactic fermentation
  • Dosage: 8 g/l

The color of this wine is orange pink. The calm and regular effervescence gives birth to a sustained and delicate cord whose bubble is very fine.

Nose: This wine is powerful, fruity, developing aromas of strawberry, raspberry, sour cherry, and floral notes of peony with a vanilla finish. This bouquet of fruit is supported by slight notes of almond, cinnamon, honey, and wood. Length, complexity, and balance define a mouth in harmony with the nose.

Palate: We note a beautiful purity, an excellent finesse on the palate with a creamy texture that allows us to discover an elegant wine with beautiful vinosity. In the mouth, very refreshing, reminiscent of pomelos on the finish.

Food Pairing: This cuvee is appreciated with refined dishes, such as salmon in strawberry foil or fried langoustines. It can also be served with a fillet of red mullet, or even a rib of lamb marinated with vegetables. Finally, for sushi lovers, this champagne is the perfect match.

Dark garnet with a lucid rim, the wine exhibits aromas of briar fruit, ripe blackberry and dark plum with a tinge of minerality and charred meat. Brawny on the entry, it has an equally big mid-palate with complex flavours of ripe brambly fruit, a touch of earth and notes of espresso bean. Still massive through to the finish with soft drying tannins, the unique varietal characteristics of the blend clearly reveal themselves over time.

Domaine Albert Mann Pinot Noir Les Saintes Claires 2020

    Wine, Red
    $158.00
The vines, which are at least 25 years old, were planted near the Grand Cru Mambourg above the Clarisses monastery in Sigolsheim. The yields here are only 26 hl/ha. Ruby red color, beautiful shine. The nose is discreet with a floral touch as well as notes of mara strawberries. In the mouth, a precision, a depth, a radiance that makes you want to repeat endlessly. Beautiful body hold, this racy wine reveals superb liveliness. A touch on the palate with notes of velvet. It has a rigor and a solar tone which underline its raw material and allow this Pinot Noir to give a very gastronomic dimension. Food Pairing: Veal, Game, Poultry, Mushroom "Stunning blackberry and black-cherry nose with notes of orange zest and cinnamon. Such a graceful wine, the power and concentration below the waterline at the front and on the mid-palate, until they sweep you away at the diamond-bright finish. So much energy and vitality that it's dangerous! From a site just below the Grand Cru Furstentum. 65% whole cluster. From biodynamically grown grapes. Drink or hold." - 98 points, James Suckling

Overture By Opus One (2018 Release)

    Wine
    $250.00
In the tradition of many great Bordeaux estates, Opus One produces a fine second wine called Overture. Like the introduction of a great musical piece, Overture, the wine, presents elements of the exceptional work itself, although certainly not in its entirety or full complexity. Since 1993, we have created Overture as a result of our highly selective process for Opus One. We meticulously cultivate each section of our estate vineyard with the attention to detail and singular focus required to produce Opus One. This diligence carries through the extensive blending process, and not all wine-lots from our estate are chosen for the final Opus One blend. Yet, when these remaining lots are afforded additional time in French oak barrels, coupled with the added flexibility of blending across multiple vintages, the final wine, Overture, achieves remarkable elegance, complexity and approachability. As a natural extension of the creation of Opus One, Overture’s varietal composition evolves based on the lot selections made for each vintage. Overture reflects the proportion of Bordeaux-heritage grape varieties planted on our estate: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec. Uniquely, Overture captures the essence of our estate across vintages; therefore the exact blend and cellar approach will always differ from Opus One.
