COCCHI ROSA

Cocchi Americano is an aromatized wine created in 1891 by Giulio Cocchi and since then produced without interruption according to the original recipe.
The name “Americano” is both due to the alcohol made bitter (“amaricato”) by the addition of herbs and spices and to the American habit of drinking vermouth with ice and soda.
Produced according to Giulio Cocchi original recipe, Cocchi Americano is recognized in Asti as the aperitif par excellence – a real piece of history of our town.
On its label the original futurist rooster designed in the 30’s and representing his aperitif function (“it awakes the appetite”) as well as one of the symbols of the town of Asti.

During its history, Cocchi has produced some variants to its Aperitivo Americano. The most recent is Cocchi Rosa produced with a base of red wines of Piedmont to which herbs and spices extracts are added, in particular gentian, cinchona, citrus zests and rose petals.

CHARACTERISTICS

Cocchi Rosa name reminds us that it’s produced with red wines, from which it derives its colour and wild rose notes. Refined with natural extracts of flowers and spices, in particular gentian, cinchona and citrus as per the Americano Bianco but with the addition of saffron, vanilla and rose petals. Its beautiful red colour is completely natural and derives from the wine.

HOW TO DRINK IT

The classic version foresees a cocktail glass with ice cubes, a spray of soda and a zest of rose grapefruit.
Soda can be pleasantly replaced with ginger beer, lemon soda and tonic water.
In its spritz version, Cocchi Rosa is mixed with Brachetto wine and a zest of rose grapefruit or lemon. Garnish it with rosemary.
The combination with spirits such as gin, vodka and mescal is particularly positive. Cocchi Rosa is a perfect ingredient for the new trend of “low octane” cocktails, with a low alcohol content.

Kamiki is a new expression of premium Japanese style whisky blessed by Omiwa priests from Nara. Nara is the ancient capital of Japan and it holds many temples from Shinto, Tengri and Buddhist religions, which makes Nara «The City of Temples». Kamiki production is protected by Omiwa Temple priests. Omiwa is one of the oldest extant Shinto shrine in Japan over thousand years old and protecting local alcohol producers ever since. To celebrate the timeless alcohol tradition of the region, rare Japanese malt whiskies and finest malt whiskies sourced from rest of the world are blended and later fused with the highest quality pure spring water. Nara is covered with dense Yoshino Sugi (Japanese Cedar) forests. Yoshino Sugi is used to build temples, burnt in temples to calm mind and to age local alcohol products. Kamiki uses a unique second maturation technique, while blend is rested for a second time in Yoshino Sugi –Japanese Cedar- casks to capture a perfectly smooth taste, a scent of sandalwood on the nose and a zest of green tea in the finish. This second maturation makes Kamiki; “THE FIRST WHISKY IN THE WORLD WITH JAPANESE CEDAR CASK FINISH”! Kamiki name is derived from the Miwa Mountain (Mountain of God), which is protected by Omiwa Priests. Inspired by beautiful breezes coming from Miwa, the whisky is named KAMIKI, where KAMI means God and IKI means breath. Kamiki whisky has a smooth taste, complex flavor and driven by pure malted barley. There is no age statement on the product. It has been aged in oak barrels minimum of three years and second aged in non-charred local cedar casks. Kamiki comes in a premium gift box, truly displaying its Japanese heritage. Nose: A perfectly balanced heather honey and sandalwood. Palate: Sweet caramel, Japanese plum, and balanced oak with peat Finish: Hints of toffee and a long-lasting finish with a zest of green tea. Hand-picked, individual parcels were destemmed without crushing into small open-top fermenters. The fruit was soaked until natural fermentation commenced before a selected yeast strain was inoculated to carry on and finish the fermentation, which was hot and quick. During this time, the ferments were worked to extract tannins appropriate to fruit weight and intensity. The more aromatic parcels were pressed off skins within five days of dryness, and the Swiss clones spent up to two weeks on skins. Parcels then went to barrel where we used only 5% new oak, instead opting for a high percentage of one-year-old (20%) to better match fruit weight. The wine then spent 12 months in barrel undergoing malolactic fermentation in spring, before being lightly fined and course pad filtered prior to bottling. Colour: Crimson and pink flashes against a plummy red base. Aroma: Aromatics of currant pastries, woody spice’s, and manuka leaf, leading to notes of forest undergrowth and florals. Palate: Moderate fruit sweetness, fine tannin and restrained volume allow savoury elements to splice evenly into the tart red fruit. A very enjoyable aromatic pinot noir, with good fruit density pH: 3.70 Acidity: 5.25 g/L

CHARACTERISTICS
Cocchi Americano, for its nature, represents the link between wine and liquors being a wine plus a small quantity of alcohol bittered (“amaricato”) by the infusion of precious herbs and spices: white wine, sugar, herbs and spices infusion in alcohol and in particular gentian flowers and leaves, Artemisia, Cinchona, bitter orange peel, elderflower and others. To produce Cocchi Americano, white wine is aromatized with the extracts obtained through a cold infusion in alcohol, then refined for balancing the spices’ aromas and tastes.
HOW TO DRINK IT
The classic version sees it served well chilled in a cocktail glass with ice cubes, completed with a splash of seltz so to free all its aromas and typical perfumes. It can be perfected with a squeezed out orange peel. The Spritz Americano version foresees the use of a wine glass plus the addition of a dry sparkling wine. It becomes Royale in combination with a metodo classico Alta Langa DOCG. In the Summer version the glass is filled with chopped-up ice, making a perfect refreshing drink. The naturally bitter note of Americano is not lost even when abundantly diluted. In mixology, Cocchi Americano is exceptionally versatile for the classic cocktails as Vesper Martini, Corpse Reviver #2, White Negroni, as modifier or as a base for the aromatizing infusions. Particularly successful the combination with spirits such as gin, vodka and metzcal. It is a perfect ingredient for the new strong trend of the “low octane” cocktails with low alcoholic content.

Cocchi Vermouth di Torino Extra Dry, released on the year of Cocchi’s 130th anniversary, is a classic-style vermouth from the birthplace of vermouth, Piemonte. “Ricetta Piemontese”(Piedmontese recipe), stated on the label, is a very precise indication of the content: all the relevant ingredients for this vermouth come from Piemonte and have a strong bond with our region.
