“There is no reason for us to craft sake unless it’s super delicious.”, this is the Dassai way. Using Yamada-Nishiki rice polished down to 45%, we deliver fruit aromatics and delicate sweetness.
Made from Yamadanishiki rice (the highest quality rice for sake) polished to 45% of its original volume, Dassai 45 presents a fresh and fruity palette with aromas of pear, grape, pineapple, apricot and watermelon but also notes of chestnut and puffed rice.
This rich, structured and powerful sake can be enjoyed chilled as an aperitif but is also the ideal companion for all types of dishes such as white meats and poultry as well as cheese.
Sake or nihonshu is a Japanese alcoholic beverage with a volume of 14 to 17%. It is made from a mixture of water, yeast and steamed rice, a small part of which has been inoculated with a microscopic fungus, the koji, in order to improve fermentation.

Woodford Reserve Derby 145 2019 Edition
Woodford Reserve has released its 2019 Kentucky Derby bottle. The release coincides with the 20th anniversary exhibit of its Kentucky Derby bottles at the Frazier History Museum in Louisville.
The limited-edition 2019 Woodford Reserve Derby bottle features thoroughbreds racing across the bottle and is the colorful artwork of Keith Anderson. This is the second year that Anderson, who works in the Bourbon Street Café at Brown-Forman headquarters in Louisville, has been chosen to have his work featured on the collectible annual release.

Cockburn’s 20 Year Old Tawny has a lovely bright amber tawny colour. On the nose with an amazingly delicate and complex bouquet of fruitcake, honey and nuts combined with notes of orange peel. On the palate smooth and polished, wonderfully balanced, with rich and warm nutty flavours leading to a long and lingering finish.
Cockburn’s 20 Year Old pairs extremely well with nuts, dried fruits and fruitcake, but is also
delicious with vanilla ice cream or crème brûlée. Serve lightly chilled to enjoy at its finest.

Orin Swift Blank Stare 2019
A glowing pale straw with a striking touch of chartreuse sits in the glass. Aromatically, the wine pops with lime zest, gooseberries, ripe passionfruit, fresh cut grass and lemon bars. On the entry, the acidity acts like a belt, constraining the voluptuousness; similar taste profiles to the nose plus crispy green apples and the faintest hint of fresh sage abound. The finish is reminiscent of ripe kiwi and limoncello, teetering on a beam of lingering acidity.

The GlenDronach Traditionally Peated
To honour The GlenDronach’s early whisky making heritage, Master Blender Dr. Rachel Barrie crafted The GlenDronach Traditionally Peated using the same principles laid down by our founder James Allardice almost two centuries ago. At this time, it was traditional practice in the Highlands to burn peat in the kiln towards the end of the barley malting, creating a rich and warm, earthy smoke. Interwoven with robust Highland characters, The GlenDronach Traditionally Peated is peated to those traditional levels and has all the full-bodied richness of The GlenDronach. Matured in the finest Pedro Ximénez, Oloroso sherry and Port casks.
The expression is bottled at 48%, non-chill filtered and natural in colour.

- Nose: Highland toffee and treacle meld with dark honey and coal smoked barley.
- Taste: Sip burnt orange and treacle on a base of cloves and smoked bramble.

This unpasteurized, no charcoal filtration and no dilution with water sake has a big flavour of toast, nuts, and spice. Plump tastes like Omachi, smooth taste. Glossy sweetness and rice umami. Good acidity is intertwined with them, tightening the aftertaste. Minerals gives it an elegant complex taste with long lingering finish.

Orin Swift Palermo 2021
Poured as a dark garnet, the wine opens with primary aromas of ripe cassis and blackberry. Supporting hints of dark chocolate, toasted oak and cedar support the typical Orin Swift Cabernet Sauvignon nose. The entry is flooding with notes of dark fruits and a mid-palate bolstered with redcurrant, bay leaf and a reemergence of cassis. The wine closes with well-developed tannins and a striking minerality despite the supple and soft finish.

Orin Swift 8 Years In The Desert 2020
Bright violet in the glass, the 2020 8 Years in the Desert is the epitome of our style, the reason we are even here in the first place.
Nose: As it’s being poured, the aromatics hit squarely on the nose with a perception of sweetness: pure brambly raspberry juice and blueberry preserves with a hint of white pepper and High Sierra forest floor. Yet, the perceived sweetness on the nose is just that, perceived, and doesn’t carry through to the palate.
Palate: Lush and enveloping with a beam of acidity, notes of blackberry pie, plum and kirsch flourish. Ultra-round tannins and lingering raspberry, the wine finishes in slow-motion.
Varietal: Zinfandel, Syrah, Petite Sirah

Vibrant and aromatic, with citrus aromas of lime and tangerine, blended with subtle floral notes. Smooth and fresh, this Sauvignon Blanc has a great mouthfeel and a long finish.
After several years the 2021 harvest started by the end of February in what we refer to as “normal timing”, the main reason is given that we had a colder season that led into a slower maturation curve, thus accomplishing a more homogeneous process that brought complexity and intensity to the grapes. The characteristics of this harvest derived in moderate yields, which benefited the concentration of the fruit, allowing for its origins and variety to express themselves to its full potential. As always, the first variety to be harvested was our Sauvignon Blanc, this year surprised us with great aromatic potential, both fresh and expressive. Being the result of a cold year, it delivers freshness in the mouth, with a long crispy acidity at the end.

Dassai Junmai Daiginjo 39
Showing a luscious and juicy character with a nectar-like sweetness on the palate, followed by a long bright finale.
Produced by the Asahi Shuzo brewery, Dassai 39 is a premium sake of the Junmai Daiginjo type, which means that the rice used has been polished to more than 50% and no alcohol has been added. As the name suggests, this premium sake has a residual rice grain content of 39% so that only the noblest part of the rice remains, the heart.
The finesse of its aromas is a perfect accompaniment to shellfish, fish in sauce and grilled or steamed vegetables.
