This piece of many yearsā€™ work bore fruits in the form of a collection of excellent rums aged in American Oak with Sherry and Port casks finish. The superbness of the rums in this series is proof of the craftsmanship of the Parra family and their multi-generational experience. Nose: The toasted top of a creme brĆ»lĆ©e, agave, bright yellow flowers, oak spices and hints of liquorice on the nose. Palate: Freshly baked rye bread, cinnamon spiced apple doughnuts and some leather tones. This has an earthy depth with a spicy undertone and fruity, apple-led top notes. Toasted hazelnuts.   • Nose: Chocolate sauce mixed with Pedro Ximenez sticky sherry, Christmas cake, cinnamon and ginger. This is about as rich and complex as a spirit gets. Old leather and vintage book shops add to the complexity, before black cherry finishes the journey.
  • Palate: Black Forest Gateau is the fist note, with all the dark cherry, cream and chocolate notes combining brilliantly. The dark cherry moves towards cinnamon and cigar tobacco on the palate, with a light coffee note adding texture and flavour.
  • Finish:Ā Rich, with a great mouth-coating property that allows the cocoa notes and red fruits to finish this sumptuous rum.

  • Palate : A rich and rounded palate of vanilla, white chocolate and chopped almonds, with a hint of strawberry and cassis. Rich and fruity.
  • Finish : More of the cassis and white chocolate notes with hints of raspberry too.

The Juyondai Shichitare Nijjukkan Junmain Daiginjo sake is a premium sake that is considered as one of the rarer series of rice wine in Japan. It is highly sought after as the production for this sake is considerably less than those of other kinds of sake.

Utilising the special technique created by Takagi Shuzo, 75kg of rice water is used, extracting sake after pressing the bag 7 times and allowing it to drip from the bag.Ā  This time consuming method and small amount of sake collected each time make this sake very are and limited. Polished to 35%, the sakeĀ excuses a velvety textureĀ amidst its richness. Ā 

With a ginjyo aroma of ripe melon and white peaches, the sake is beautifully layered with delicate fragrance.
