Inspired by Edinburghās rich naval heritage of cannons and the famous One Oāclock Gun, our Cannonball Gin is a Navy Strength gin that lives up to its evocative name. Cannonball resurrects a historic style of gin commissioned by the British Navy, making this gin an homage to Edinburghās seafaring past.
Cannonball is a strong, characterful gin that can be enjoyed straight up or in a G&T. It makes for a vigorously refreshing Dry Martini, served with a lemon twist to complement the ginās peppery, zestier notes.
Aroma : Powerfully spirited and spicy on the nose.
Palate : Bold juniper with a kick of pepper and piquant spice.
Our fruit was harvested by hand at the end of February then whole-bunch pressed and settled in tank before transfer to tank and barrel for fermentation. The wine underwent a partial malolactic fermentation and was aged for 10 months ā part in stainless steel tank to retain fresh fruit flavours, part in barrel for added complexity. We used a mix of old and new French oak barrels.

Mornington Peninsula, Australia
Opening with stone fruit and floral aromas with bright citrus notes, this wine has layers of fruit flavour and creamy complexity derived from 11 months aging on lees in barrel.
Vintage 2016 was marked by warm and dry conditions and the Mornington Peninsula harvest was one of the earliest on record. It arrived in a hurry too and many vignerons were being picked in early February. The resulting wines have excellent flavour and weight and tend to be earlier drinking styles.
WINEMAKING
Carefully hand harvested grapes were batch fermented.Ā Mostly destemmed with two batches with a small portion of whole cluster component. Fermented on skins for around three weeks. The resulting wine was gently pressed to French oak barrels for maturation.
AGEING
In French barrels, including 20% new barrels, medium-plus toast, from the Alliers and the Vosges forests.

There wouldn't be an apple without an apple tree and there wouldn't be Jack without an oak tree. After all, our American white oak barrels are more than a container for the whiskey; theyāre really an ingredient. All of our Tennessee Whiskeys draw their rich amber color and a good part of their distinctive flavor from the barrel it matures in. We couldnāt make the perfect whiskey for this drink without them.
