Its deep gold colour is defined by a fine and magnificent effervescence. These pearls create a white cordon on the surface.
The powerful bouquet reveals aromas of coco powder and exotic wood. Shortly after, this cuvée reveals all of its character with vine peaches, pear, rhubarb and frangipane.
A remarkable attack with the right balance of freshness and richness. A touch of acidity is enhancing notes of butter and dried fruit. The aromatic persistence is underlined by a tangy finish.

Wine and food pairing

Too complex food pairing should be avoided to keep the wine balance. It texture and mature aromatic profile, will lead the wine to seek products preferably like caviar or with dishes with firm texture (lobster, white meats) and reduced sauces.

About brand

A family business for five generations, Vilmart is driven by unique intuition, a taste for precision and a certain form of freedom.

In 1890, Désiré Vilmart founded the house in the heart of the village of Rilly-la-Montagne, at the foot of the Montagne de Reims. He was succeeded by his son Charles, then his grandson Renan. They were both instrumental in furthering the house’s growth. Independence and boldness were already characteristic of the house’s outlook.

During the Second World War, Renan witnessed the destruction of the estate. With courage and determination, he applied himself to reconstructing buildings and facilities over cellars that had been spared; Vilmart still occupies these premises, which have been developed and added to by each successive generation.

The 11 exclusively Premier Cru hectares of the Vilmart vineyard are located in the Rilly-la-Montagne terroir. The proximity of the plots and unity of place, a particular feature in Champagne, allows the vines to be tended with particular care. The Vilmart vineyard is also notable for its mix of varietals: a majority of Chardonnay (60%), with the remaining 40% planted to Pinot Noir.

This proportion is highly unusual for the region, essentially planted to Pinot Noir and Meunier. The estate’s vines are on average 35 years old. Grapes from the oldest vines, which are 60 years old, are reserved for crafting Coeur de Cuvée and Blanc de Blancs champagnes.

Waipara West N Block Chardonnay 2018

$55.00 Original price was: $55.00.$42.00Current price is: $42.00.
A stripped-back Chardonnay style that showcases the fruit from our site while still being rich in subtle complexities. We achieve this using large, berried Chardonnay clones, whole bunch pressing, minimal use of old oak barrels, extended time on yeast lees and no malolactic fermentation. Three qualities define this wine - above all else, the first being the fruit aroma/flavour, which we want to be subtle and pure. Acid structure is the second propping up the wine and giving it a salt crunch. Yeast derived aroma/flavours and mouthfeel provide balance. Color: Pale golden kiwifruit in colour with hues of green and silver. Aroma: On the nose, this wine is truly multi-layered however, all of them are understated. Fresh pineapple and sea salted cracker at first, perfumed white flower and white tea in the centre, all sitting on a base of malt toffee. These aromas combine and evolve into a vast number of flavours in the mouth. Palate: Ripe peach and lemon meringue define the taste, due to a combination of full-bodied mouthfeel, cleansing acidity and a bite on the finish. A rich complex wine. Food Pairing: Pork. Rich Fish (salmon, tuna, etc...), Vegetarian, Poultry Residual Sugar: 0.52 g/L pH: 3.51 Acidity: 6.75 g/L

Chateau de Pommard Marey-Monge Vivant 2016

$145.00
TASTING Behind its clear, pale ruby color, Vivant 2016 hides a youthful nose and palate full of strawberries, red cherries, and sweet spices, such as white pepper. The finish is long, while the tannins are thin, creating a velvety texture. Alongside acidity and alcohol, they create a balanced and harmonious structure that will enable this wine to age elegantly. Serving Temperature: 16°C SOILS Over the course of the Jurrasic era, our subsoil turned into a millefeuille of geologic strata. Our vineyards have varying degrees of sun exposure, soil composition, and vine ages depending on their location within the Clos Marey-Monge. Vivant is produced from our youngest vines. WINEMAKING Hand-harvested grapes, hand-sorted on a vibrating table. 100% de-stemmed, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in French oak barrels for aging on fine lees. Light filtration. Production: 5,000 bottles

Ornellaia 2016 “La Tensione”

$300.00
Ornellaia is a cuvée of Cabernet Sauvignon, Merlot, Cabernet Franc & Petit Verdot and the faithful expression of unique terroir developed in harmony with nature. 2016 represents another immensely successful vintage highlighting all the virtues of Bolgheri’s climate: abundant sunshine, without excessive heat, a dry summer to allow the grapes to achieve perfect ripeness and concentration, and just about enough rain to avoid stress. All these elements combine to yield a wine that shows lush ripeness and crisp firmness, opposing forces creating a sense of dense raciness we like to describe as “tension”. Particularly dark and young colour is the prelude to a complex nose of black berries, spices and cedar. The palate is rich and dense, balanced by a refined and firm tannic structure, lifted by a juicy and bright acidity. 51% Cabernet Sauvignon, 27% Merlot, 18% Cabernet Franc, 4% Petit Verdot Awards

Opus One 2021

$565.00
Opus One was founded by Baron Philippe de Rothschild, legendary proprietor of Château Mouton Rothschild, and renowned Napa Valley vintner Robert Mondavi. By combining the great winemaking traditions and innovations of both families, the founders’ singular goal was to create an exceptional wine in the heart of Napa Valley. Opus One, like any great work, arose out of passion. Dedicated to uncompromised quality, Opus One’s sole purpose is to express this vision and passionate spirit for generations to come. VINTAGE 2o21 In 2021, the vineyards experienced unseasonably dry conditions with the second lowest rainfall in Opus One’s history. The vineyard team took advantage of the dryness to cultivate early to avoid unnecessary competition for the limited water available. Cooler temperatures prevailed, and rains in late March arrived just in time for the slightly delayed bud-break on April 7th. Warmer weather in April and May allowed for ideal shoot growth and flowering began on May 17th. Reduced water led to lower-than-average yields, which gave the fruit exceptional concentration and flavor at harvest. The summer months were very warm; however, there were no prolonged periods over 100 degrees. Harvest began on August 31st and was steady and brief, with completion occurring on September 24th. The Opus One 2021 effuses seductive, dark-fruit aromas of crushed cassis, blackberry, and black cherry with subtle hints of violet, vanilla, and baking spices. Bright and fresh on the attack, concentrated flavors mirror the aromas and are coupled with an exceptionally plush, creamy texture in the mid-palate from the fine-grained tannins. Poignant notes of black tea, licorice, and dark chocolate lead to a long lingering finish. With attentive cellaring, the wine will delight for decades to come. VARIETALS Cabernet Sauvignon 93%, Cabernet Franc 4%, Petit Verdot 2%, Merlot 0.5%, and Malbec 0.5% AWARDS

Opus One Overture 2021

$278.00
First created in 1993, Overture by Opus One is a traditional “second wine” meticulously crafted with organically grown fruit from the estate vineyards. The fruit is harvested and vinified with the same care, precision, and attention to detail as Opus One. During and after harvest, the winemaking team rigorously evaluates the wines from each vineyard block and blends only those with the unique aromatics, flavors, and textures recognized as ideal for Overture—a cellar-worthy wine with remarkable freshness, approachability, and suppleness.   VINTAGE 2o21 In 2021, the vineyards experienced unseasonably dry conditions with the second lowest rainfall in Opus One’s history. The vineyard team took advantage of the dryness to cultivate early to avoid unnecessary competition for the limited water available. The summer months were very warm; however, there were no prolonged periods over 100 degrees. Harvest began on August 31st and was steady and brief, with completion occurring on September 24th. Overture 2021, the first vintage-dated bottling of the second wine of Opus One, offers fresh aromas of plum, blackberry, and cherry enhanced by alluring notes of dried rose petal, forest floor, and earthy minerality. Juicy and bright on the palate with distinctive flavors of black currant, blueberry, and fraises du bois; the wine delivers a velvety texture with powdery tannins. Subtle coffee and dark chocolate round out the long finish coupled with a well-integrated acidity. VARIETALS Cabernet Sauvignon 89%, Cabernet Franc 4%, Petit Verdot 4% and Merlot 3%
