Handpicked Regional Selection Chardonnay 2019
Our fruit was harvested by hand at the end of February then whole-bunch pressed and settled in tank before transfer to tank and barrel for fermentation. The wine underwent a partial malolactic fermentation and was aged for 10 months – part in stainless steel tank to retain fresh fruit flavours, part in barrel for added complexity. We used a mix of old and new French oak barrels.
Crisp & Refreshing, White, Medium-bodied wine. Great with river trout, Asian style dishes, roast chicken.

In the tradition of many great Bordeaux estates, Opus One produces a fine second wine called Overture. Like the introduction of a great musical piece, Overture, the wine, presents elements of the exceptional work itself, although certainly not in its entirety or full complexity.
Since 1993, we have created Overture as a result of our highly selective process for Opus One. We meticulously cultivate each section of our estate vineyard with the attention to detail and singular focus required to produce Opus One. This diligence carries through the extensive blending process, and not all wine-lots from our estate are chosen for the final Opus One blend.
Yet, when these remaining lots are afforded additional time in French oak barrels, coupled with the added flexibility of blending across multiple vintages, the final wine, Overture, achieves remarkable elegance, complexity and approachability.
As a natural extension of the creation of Opus One, Overture’s varietal composition evolves based on the lot selections made for each vintage. Overture reflects the proportion of Bordeaux-heritage grape varieties planted on our estate: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec. Uniquely, Overture captures the essence of our estate across vintages; therefore the exact blend and cellar approach will always differ from Opus One.

Enjoy fresh and fruity in the first 5 years. Ageing potential of 8 to 10 years. Try the Classique White as an apéritif with salmon cream toasts or simply dry nuts! Excellent with grilled fish and also white meat. Perfect with goat and sheep fresh cheese. Aerate and drink at around 14°C. If served too cold, this wine will not develop its full aroma.

WINEMARKER’S NOTES
Nuance and Intrigue characterize the wine, starting with a dark crimson and a ruby rim but manifested by the aromatics: white pepper, nutmeg, cinnamon, clove, pine resin and crème de menthe. An entry dominated by a bright acidity, the mid-palate explores characteristics of rhubarb, savory and a hint of wild strawberry with a long finish indicative of graceful aging.

Chateau de Pommard Clos Marey – Monge “Simone” 2016

Nestled at the foot of the Château de Pommard, Simone is a 0.53 hectares plot of remarkable terroir. The delicacy and intensity of a red wine strongly depends on the quality of the internal surface of clay contained in the soil. The higher the density, the more a vineyard can produce grand cuvées. In 2009, Claude et Lydia Bourguignon, both agronomists and founders of the Microbiological Laboratory for Soils, conducted a thorough study on the Clos Marey-Monge and the Simone plot. What they found exceeded every expectation. With an internal surface of clay beyond 730 square meters per gram, Simone is close to the world record.
With only 1,800 bottles of this intense, rich and complex Pinot Noir—our rarest cuvée, produced in the most generous years, Simone is available by allocation only.
Powerful and delicate, our Simone 2017 shows a deep, dark and bright ruby colour with purple accents. The nose first reveals wild aromas of venison, underwood and elderberry, followed by notes of red roses, dry flowers and sweet spices. The palate is fresh, with a firm yet velvety tannic structure. With a long, vibrant and salty finale, this Pinot Noir shows an impressive depth that will still be there in 30 years from now.

Behind its clear, pale ruby color, Vivant 2016 hides a youthful nose and palate full of strawberries, red cherries, and sweet spices, such as white pepper. The finish is long, while the tannins are thin, creating a velvety texture. Alongside acidity and alcohol, they create a balanced and harmonious structure that will enable this wine to age elegantly.

Over the course of the Jurrasic era, our subsoil turned into a millefeuille of geologic strata. Our vineyards have varying degrees of sun exposure, soil composition, and vine ages depending on their location within the Clos Marey-Monge. Vivant is produced from our youngest vines.

Hand-harvested grapes, hand-sorted on a vibrating table. 100% de-stemmed, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in French oak barrels for aging on fine lees. Light filtration.

Intense aromas of nectarine and peach, both yellow and white, mingle with high notes of lime, grapefruit, and honeysuckle on the nose. These continue to the palate where they meet candied ginger and rich chamomile flavors which will deepen as the wine ages.
