Jayson by Pahlmeyer Cabernet Sauvignon 2018

Jayson Cabernet Sauvignon was harvested at night to deliver naturally cooled grapes to the winery. Whole clusters were gravity-fed onto a vibrating table for hand sorting. Selected clusters were gently de-stemmed, delivering whole berries for a final hand sorting. After several days of cold maceration, the fruit entered primary fermentation for two to three weeks, then gently pressed in our stainless-steel basket. The wine finished malolactic fermentation in barrel, then aged for 15 months in 88% new French oak barrels. Effusive aromas of blackberry pie, cassis, and leather greet the nose, foretelling the full, expressive palate. Intense notes of blackberry and plum interweave with flecks of pink peppercorn and plowed earth, amplified by a lift of fresh acidity. The tannins are firm yet seamlessly melded with the rich fruit, driving to a plush, juicy finish. "A creamy, full-bodied red with aromas of stewed blackberries, blackcurrants, dark chocolate, black tea and sweet tobacco. Ripe, polished tannins support a velvety core of dark fruit and chocolate. [Bundle of 3] Louis M. Martini Napa Valley Cabernet Sauvignon 2018

Our 2018 Napa Valley Cabernet Sauvignon is a layered wine with notes of black cherry, blackberry and plum are complemented by hits of toasted oak, dried currant and baking spice. Fine grained tannins and ample brightness on the palate give way to a polished mouthfeel and exceptionally long finish. Upon arrival at the winery, the grapes were carefully destemmed and transferred to upright tanks for a two-day cold soak. To build its round, elegant mouthfeel, the wine saw 15 to 20 days of maceration time and was pumped over two to three times daily. Each lot was aged and meticulously evaluated separately, with the final blend taking place in May 2019. In total, the wine aged for 16 months in a combination of French and American oak barrels (40% new). Varietal: 100% Cabernet Sauvignon "A slightly high-toned red with walnut, berry, chocolate and spice on the nose and palate. Medium-to full-bodied with chewy tannins and a rich finish. Waipara West N Block Chardonnay 2018

A stripped-back Chardonnay style that showcases the fruit from our site while still being rich in subtle complexities. We achieve this using large, berried Chardonnay clones, whole bunch pressing, minimal use of old oak barrels, extended time on yeast lees and no malolactic fermentation. Three qualities define this wine - above all else, the first being the fruit aroma/flavour, which we want to be subtle and pure. Acid structure is the second propping up the wine and giving it a salt crunch. Yeast derived aroma/flavours and mouthfeel provide balance. Color: Pale golden kiwifruit in colour with hues of green and silver. Aroma: On the nose, this wine is truly multi-layered however, all of them are understated. Fresh pineapple and sea salted cracker at first, perfumed white flower and white tea in the centre, all sitting on a base of malt toffee. These aromas combine and evolve into a vast number of flavours in the mouth. Palate: Ripe peach and lemon meringue define the taste, due to a combination of full-bodied mouthfeel, cleansing acidity and a bite on the finish. A rich complex wine. Food Pairing: Pork. Beronia Reserva is made from a selection of the best grapes from the oldest Tempranillo vines, plus some Graciano y Mazuelo. After a spell undergoing cold pre-fermentation maceration and controlled fermentation with periodic pumping over to extract the desired colour and aromas, the wine spent 18 months in mixed French and American oak barrels to create the unmistakable ā€œBeronia Styleā€. Lastly the wine was left to rest in the bottle a further 18 months before being released to the market. On the palate it has layers of interest starting with rich dark berry fruit flavours, deft oak treatment, and plush tannins. It is ready to drink and will age beautifully over the long term. This fruit was hand harvested in late March in a selection of our vineyards; the majority was from the Wilyabrup sub-region and there was a parcel from Carbunup. The wine was aged in French oak barriques, 30 per cent new, for 15 months.

Predicador is a red with a bright, intense colour, which smells ofĀ fruit and earth, but also of balsamic notes, menthol and wild herbs; that feeling of being deeply rooted to the earth which is palpable all the way through. This isĀ a concentrated, mature, fresh and complex wine, with a certain minerality (stones), some subtle caramelised sugar notes, liquorice, spices (cloves) and the scent of red roses, and plenty of volume. Shows a very tense purple color. On the nose shows ripe red fruits. Very mineral. With balsamic and fine woods. In the mouth it has an enveloping volume and, as my friend Pacoā€™s father used to said about these kind of wines: ā€œThis is chocolateā€. Nicolas-Josephā€™s 3 hectares are comprised of flat limestone rocks with red clay ā€” yielding a fleshy, complex Pinot Noir with red fruits and sweet, silky tannins. Divided into two parts, Jeunes and Vieilles, this plot located alongside the north-eastern facade of the ChĆ¢teau Marey-Monge displays the least calcareous soil structure in the Clos. Hand-harvested grapes, hand-sorted on a vibrating table. 100% de-stemmed, placed into stainless steel fermentation vats by gravity flow. Weeks-long maceration, minimal pumping-over and punching-down. Pressing in pneumatic press. Placed in French oak barrels for aging on fine lees. Light filtration Tasting Notes: With a deep ruby color, our Nicolas-Joseph 2018 reveals a nose marked by floral aromas of fresh and faded roses, accompanied by ripe black fruit and sweet spices. The palate confirms the aromatic profile and unveils notes of cinnamon and clove. With its relaxed tannins, this round and full-bodied Pommard can be enjoyed today, but will only reach its peak in the next decade. Recommended Serving Temperature: 16Ā° Production: 9000 bottles
