Glenglassaugh Torfa
At Glenglassaugh, we also produce a very limited quantity of whisky using richly peated malted barley as the cereal varietal. Glenglassaugh āTorfaā, with its peaty, phenolic nature, is a unique expression, and is quite different to the usual style of whisky produced in the Highlands.
- Colour : Gleaming yellow gold
- Nose : Vivid, sweet, sooty campfire smoke and sea-air infuses zest of lime, apricot jam and ripe soft fruits; all gently warmed by hints of stem ginger and cracked black pepper.
- Palate : An eloquent, sweet coastal pear smoke engulfs candied peel over melon, pineapple and roasted red apples. Oat biscuits, hints of heather honey and a gentle cigar box spice combines to give a terrific balance to the expressive smoke character.

Today that pioneering spirit is embodied in the Woodford Reserve Distilleryās Masterās Collection series and itās latest release ā Cherry Wood Smoked Barley.

Distillerās Notes
The 2017 Masterās Collection Cherry Wood Smoked Barley is the first Kentucky bourbon to use malted barley that has been exposed to wood smoke during its kilning process. This imparted a rich smoked almond note to the mash that carried over in the distillation process. With 30% malt content the Cherry Wood Smoked Barley mash bill has a greater amount of malt than traditional bourbon. The result is a rich, full-bodied bourbon.
Tasting Notes
- Appearance : Rich amber
- Nose : A complex mingling of deep caramel, brown sugar and dark chocolate top a layer of cherry jam and nutty crumbles dusted with wood spice.
- Taste : Intense smoked almond and malt character sweetened with cherry pie filling and a touch of caramel.
- Finish : Long smoked almond notes fade into a rich cherry fruit jam.

The 2018 Masterās Collection Select American Oak Kentucky Bourbon has been matured in one specific terroir sourced oak - Ozark. This Ozark Oak was selected for its terroirās fast-growing characteristics. Having barrels that share a common wood structure gives this special batching of Woodford Reserve a distinct nutty and sweet aromatic character that will remind you of warm baked goods.
Tasting Notes
- Color : Peruvian Brown
- Aroma : Crisp yeasty and bready notes mingle with soft oak, vanilla, milk chocolate and marzipan. Walnut, pecans and Fall leaves bring the oak tannins forward.
- Taste : Soft nutty character and a sip of sweet tea bring a deep hint of peach and cocoa powder to life.
- Finish : Long and warm with a hint of wood spice.

Waipara West Two Terrace Pinot Noir 2017
Hand-picked, individual parcels were destemmed without crushing into small open-top fermenters. The fruit was soaked until natural fermentation commenced before a selected yeast strain was inoculated to carry on and finish the fermentation, which was hot and quick. During this time, the ferments were worked to extract tannins appropriate to fruit weight and intensity. The more aromatic parcels were pressed off skins within five days of dryness, and the Swiss clones spent up to two weeks on skins. Parcels then went to barrel where we used only 5% new oak, instead opting for a high percentage of one-year-old (20%) to better match fruit weight. The wine then spent 12 months in barrel undergoing malolactic fermentation in spring, before being lightly fined and course pad filtered prior to bottling.
Colour: Crimson and pink flashes against a plummy red base.
Aroma: Aromatics of currant pastries, woody spiceās, and manuka leaf, leading to notes of forest undergrowth and florals.
Palate: Moderate fruit sweetness, fine tannin and restrained volume allow savoury elements to splice evenly into the tart red fruit. A very enjoyable aromatic pinot noir, with good fruit density
