The vineyards in Jerez are unique to the area. The soil in Jerez is majority Albariza. a white soil which contains up to 60% chalk. Therefore it has a large capacity for maintaining moisture, very important given the long, hot and dry summers as irrigation is prohibited. The area has a unique microclimate influenced by the surrounding Atlantic ocean and the rivers Guadalquivir and Guadalete. The prevailing winds are moist and warm, and now and again dry and hot Levante winds from north Africa. Temperatures are warm, with an average of 70% humidity and annual rainfall of 600 liters/m2. The harvest in Jerez begins mid August and generally lasts for 3 weeks maximum. The Pedro Ximénez grape, although a white grape, is treated slightly differently as it is destined for sweet wines. The grapes are collected from the vine slightly later and they are then sundried in a process called ´soleo´. For this the bunches are laid out on esparto mats in the vineyard for up to two weeks. During this time the grape loses about 40% of its volume due to evaporation of water which causes concentration of sugars.

Solera 1847 shows a dark intense mahogany colour due to the addition of Pedro Ximénez. On the nose aromas of raisins, vanilla, oak and slight hints of hazelnuts. On the palate a delicate wine with a smooth reminder of dates and raisins finishing with touches of caramel and oak and a subtle note of nuts.
This wine should be served slightly chilled, 10-12 ºC, in a small wine glass. Ideal as an aperitif with cheese, however also as a dessert wine with ice cream, or fruit-based desserts and with dried fruits.

The González Byass wine story began in Jerez in 1835, when young entrepreneur Manuel María González started out as a wine trader. Rapid success led him into wine production, helped by his uncle José Ángel, known affectionately as Tio Pepe, after whom he named his first solera. 186 years later it is still very much a family concern and is now in the hands of the fifth generation of winemakers. Our fruit was harvested by hand at the end of February then whole-bunch pressed and settled in tank before transfer to tank and barrel for fermentation. The wine underwent a partial malolactic fermentation and was aged for 10 months – part in stainless steel tank to retain fresh fruit flavours, part in barrel for added complexity. We used a mix of old and new French oak barrels.

Chateau de Pommard Volnay 2017
The pebble-rich and limestone soils of Volnay, rising between 230 and 280 meters above sea level, makes for a delicate, aromatic, and elegant Pinot Noir revealing the feminine profile of the appellation. Cultivated since the Middle Ages, the vineyard located on the steep slopes of the hill of Chaignot has always been a perfect fit for Burgundy’s native red grape variety.
With a delicate nose of peonies, strawberries, raspberries and cherries, our Volnay 2017 shows a feminine profile. The palate reveals notes of pomegranate and sweet spices, such as vanilla and cinnamon, as well as silky and smooth tannins. With pronounced intensity and long finish, it is a Pinot Noir made for aging, that will evolve beautifully.

Waipara West Pinot Noir 2018
Estate grown on 3 blocks with differing soil structure, wind exposure and clones – early 1980’s selections from St Helena and more recent Dijon clones. The colour is an attractive, very bright ruby garnet with distinct crimson hues at the rim. Aromatically it is as striking as it is seductive. Bright red fruits - raspberry, strawberry and Morello cherry have immediate impact with an equally impressive array of oriental spices - anise and clove. Ripe seed aromas of almond kernel and cherry stone lift the nose. Time reveals an inner core of darker black cherry, and just a hint of bramble all kept in check by some very attractive yet subtle French oak. The palate is soft, silken and warm but with a certain nervosité which is to say that as a young wine it may appear both bright in acidity and forward in tannins, but that’s just for starters. Those are simply the framework in which the wine is cradled, the fruit depth is palpable, the Pinosity generous and its presence authoritative.
Chateau de Pommard Chambolle-Musigny 2017
Chambolle-Musigny is rooted in the shallow clay and limestone soils on the easterly slopes of the Côte de Nuits, rising between 250 and 300 meters above sea level. Our Pinot Noir produced here is complex with soft tannins and a long finish. Once an adjunct to the Cîteaux Abbey, the vineyard gave its name to the village of Chambolle-Musigny, like 11 other climats throughout Côte d’Or.
With its aromas and flavours of musk, red fruits, and dry flowers underlined by notes of sandalwood and game, our Chambolle- Musigny 2017 has a beautiful touch. While still in development, this velvet red wine with a long finish presents a delicate and silky texture, enhanced by well-integrated tannins. It is approachable now, with great potential for aging.
Chateau Gouprie Pomerol 2017
Chateau Gourprie owned by the Moze Berthon family since 1820, is a charming little estate situated at Maillet, neighboring Château Gazin, l'Evangile and Le Bon Pasteur.
This vineyard is composed of 4.5 hectares laying on a superb clay-limestone and ferruginous subsoil typical of the Pomerol area. Since 2014 Hubert de Boüard (Chateau Angelus) is the wine consultant as well as Chateau Maillet the other Pomerol jewel of the Moze-Berthon family.

TASTING NOTES
Carmin color with beautiful depth. Complex nose, expressing ripe red fruit (crushed strawberry), vanilla and torrefaction. In the mouth the texture is silky and tannins express finesse and balance. The mouth evolution is long and harmonious with notes licorice and tobacco.

VINTAGE 2o21
In 2021, the vineyards experienced unseasonably dry conditions with the second lowest rainfall in Opus One’s history. The vineyard team took advantage of the dryness to cultivate early to avoid unnecessary competition for the limited water available. Cooler temperatures prevailed, and rains in late March arrived just in time for the slightly delayed bud-break on April 7th. Warmer weather in April and May allowed for ideal shoot growth and flowering began on May 17th. Reduced water led to lower-than-average yields, which gave the fruit exceptional concentration and flavor at harvest. The summer months were very warm; however, there were no prolonged periods over 100 degrees. Harvest began on August 31st and was steady and brief, with completion occurring on September 24th. Overture 2021, the first vintage-dated bottling of the second wine of Opus One, offers fresh aromas of plum, blackberry, and cherry enhanced by alluring notes of dried rose petal, forest floor, and earthy minerality. Juicy and bright on the palate with distinctive flavors of black currant, blueberry, and fraises du bois; the wine delivers a velvety texture with powdery tannins. Subtle coffee and dark chocolate round out the long finish coupled with a well-integrated acidity.
