Our reserve Shiraz is sourced from vineyards in Greenock (35%), Ebenezer (35%), Seppeltseld (30%). Dense dark berry fruits, with hints of tobacco and cocoa are further enhanced by subtle use of oak. This wine has been matured in 28% new French oak hogsheads and the balance in 3 and 4 year old French oak hogsheads and American oak barriques for 17 months sur lie, resulting in a sexy, textured palate. And who’s 2%? Moscatel! A splash of funk that supports the base line fruit, and puts the ‘ph’ in fat.

Nose : Lifted black fruit aromas with a hints of earth and spice
Palate : Rich, phat, dark berry fruits, with hints of dark chocolate and Indian ink, supported by a dense core of tannins.

Expressive nose of ripe red fruits (plums, ripe cassis …), spices and with an elegant touch of new oak. On the palate, the wine is immediately harmonious and seductive with velvety ripe-fruit flavours wonderfully cradled by the new–oak. Medium bodied with ripe tannins and a savoury finish.

Tasting Notes: Soft, elegant and fruity with excellent depth and breed. With Amiral, the objective is to make a wine which can be drunk earlier than the Grand Vin (with more Merlot). Ideally consumed after 3-7 years of ageing.
Food Pairing: This wine will perfectly accompany flavourful (red or white) meat dishes such as grilled lamb chops, braised shanks and meat stews. Also harmonious with most cheeses like Gruyère, Comté, Cantal, Reblochon, Beaufort … (avoid Roquefort and arguably Camembert). And of course, will also easily and gracefully accompany more simpler dishes like pizza and/or most barbecued foods.
Wine Spectator: Amiral de Beychevelle 2010 (90pts) Offers a juicy feel, offering a lightly roasted cedar frame to the dark plum, blueberry and blackberry fruit flavours, with a ganache-coated finish. Mornington Peninsula, Australia
The Mornington Peninsula is famous for its Pinot Noir wines and this is a fine example from a great vintage: deep colour, spicy berry aromas, a silky-smooth palate and fine tannin to finish.
Vintage 2016 was marked by warm and dry conditions and the Mornington Peninsula harvest was one of the earliest on record. It arrived in a hurry too, catching some vignerons by surprise; many were picking in early February, about a month earlier than the long-term average. In the tradition of many great Bordeaux estates, Opus One produces a fine second wine called Overture. Like the introduction of a great musical piece, Overture, the wine, presents elements of the exceptional work itself, although certainly not in its entirety or full complexity.
Since 1993, we have created Overture as a result of our highly selective process for Opus One. We meticulously cultivate each section of our estate vineyard with the attention to detail and singular focus required to produce Opus One. This diligence carries through the extensive blending process, and not all wine-lots from our estate are chosen for the final Opus One blend.
Yet, when these remaining lots are afforded additional time in French oak barrels, coupled with the added flexibility of blending across multiple vintages, the final wine, Overture, achieves remarkable elegance, complexity and approachability.
As a natural extension of the creation of Opus One, Overture’s varietal composition evolves based on the lot selections made for each vintage. Overture reflects the proportion of Bordeaux-heritage grape varieties planted on our estate: Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec. Marking the warmest year since 2008, the 2015 growing season set a record for early bloom. Drought conditions persisted, and rainfall was erratic, with most of the much-needed rain falling at the end of the previous year and supplemented by only a single storm in February, which was enough water to sustain the vines. Cooler conditions during flowering ultimately lead to a smaller number of berries on each cluster and lower than average yields. Warm summer months led to advanced veraison, which was followed by perfect ripening conditions. Harvest began on September 1 with short pauses; heat spells and continued warmth allowed for the berries to be steadily picked at their ideal maturity. The harvest was completed on October 8.
Initial dark fruit, spice and baking aromas in the 2015 Opus One are interwoven with seductive notes of violet, black tea, and sage. The entry is vibrant with ripe dark fruit flavors of plum, blackberry and blueberry followed by hints of vanilla and cocoa. Silky, fine-grained tannins provide structure and a creamy texture. The wine finishes with fresh acidity and a rich, lingering finish that promises longevity in the cellar.
