Pale light gold in colour with slight greenish glints. Bright, luminous and limpid.

The nose is full of sunshine, gaiety, beauty and maturity. A rich, splendid bouquet of a multitude of flowers. A basket of fruit on a fresh summer’s morning. The taste is full and round – a perfect balance of rich, powerful flavours and finesse, mellowness and freshness. Everything that was so appealing on the nose reaffirms itself on the taste. The finish leaves us blissfully happy with mouth filling voluptuousness.

Recommended Serving Temperature: 12-14°c

This fruit was hand harvested in late March in a selection of our vineyards; the majority was from the Wilyabrup sub-region and there was a parcel from Carbunup. The wine was aged in French oak barriques, 30 per cent new, for 15 months.

    Yarra Valley, Australia This wine was grown at our Highbow Hill Vineyard north of Yarra Glen township. The soils are sandy loam over clay and gravel over Yarra Valley mudstone. The Pinot Noir and Marsanne were planted in 1998. Varietal: Pinot Noir 95%, Marsanne 5% The colour is a clear light salmon, what the French would call “eye of partridge”. The nose has vibrant red fruit and spice aromas and the palate is surprisingly weighty with juicy fruit flavours and savoury complexity enhanced by great texture. This wine is perfect for sipping on its own and will pair handsomely with a range of foods - pan fried rainbow trout with new potatoes, smoked salmon and cucumber sandwiches, sushi.

    CHARDONNAY | 2018 Casablanca Valley Sustainable Farmed Vineyards
    COMPOSITION 100% Chardonnay WINEMAKER’S NOTES Grapes are harvested at first light and whole clusted pressed in order to obtain the structure provided by the stems. The juice sits for 24 hours and is then racked off. Part of the wine is barrel fermented in neutral oak with wild yeasts, and the rest in stainless steel tanks. Thirty percent of the wine undergoes spontaneous malolactic fermentation, enhancing the Chardonnay softness and creaminess without losing the freshness. 2018 VINTAGE An extraordinary season, with significant rainfall in the winter, accumulating a record average of the last ten years in the Casablanca Valley. Temperatures were moderate during the whole season, giving way to a slow maturity curve, achieving very good quality physiological maturity. The grapes were harvested in optimum condition, with the maximum fruit expression of the Casablanca Valley, delivering fresh, intense and long wines.
