Cockburn’s Special Reserve

Cockburn’s Special Reserve was originally introduced in 1969 and created an entirely new Port category that was fundamental to the success of Port and the Douro over the following decades. Cockburn’s Special Reserve is an exceptionally fine wine selected for its richness and concentration, from the finest vineyards in the Upper Douro and matured in oak casks for five years. This longer wood ageing gives its fruity and full-bodied palate a distinctive dry finish, making it the benchmark for all Reserve Ports. A garnet red colour. Cockburn’s Special Reserve has a youthful nose packed with rich and concentrated red fruit aromas, predominantly red cherry with hints of plum and strawberry. On the palate it's sweet, well rounded, medium length and with luscious red berry flavours leading to a distinctive peppery finish. Special Reserve is perfect served at the end of a meal, with rich, nutty or chocolate desserts, a cheese platter or simply on its own. Although usually served at room temperature, Reserve Ports are equally delicious when served lightly chilled. It does not need to be decanted and should be consumed within four weeks of opening.

Aromatic to the nose with notes of buttery-vanillin oak flavours and exotic fruit (orange rind and honeyed grapefruit).  On the palate, the wine is round, fleshy with wonderful minerality and again, delightful exotic fruit flavours.  The new-oak flavours are present. Very nice balance between the oak, fruit and acidity.  Excellent finish. 100% Sauvignon Blanc. Harvest is done 100% by hand. Following a skin-contact maceration, 75% of the juice is fermented in vats and 25% in oak-barrels. During this ageing period, “batonnage” is carried out.  After blending and filtration, bottling is carried out in late spring following the harvest.

Blend of 75% Merlot and 25% Cabernet Sauvignon. Harvest is done 100% by hand. Traditional vinification in stainless steel and temperature-controlled vats.  Ageing in oak barrels for 6 to 8 months.

Junmai Daiginjo that has been aged thoroughly in icy temperature over a year. As it took time for aging, contents in sake dissolve well in sake expressing the mellow mouthfeel as well as the umami of rice. It features muscat’s aroma and crisp aftertaste.
Medium bodied and mildly sweet.

Junmai Ginjo-Shu Recommended serving temperature for this sake with gentle and mellow tasting sake is from room temperature to cold. Due its characteristics, it does not overpower flavour of dishes and is hence suitable for most occasions both as aperitif and pairing with dishes. This sake has mild melon aroma and slight sweetness in taste.

West Side Best Side – Waipara West Pinot Noir 2018

Estate grown on 3 blocks with differing soil structure, wind exposure and clones – early 1980’s selections from St Helena and more recent Dijon clones. The colour is an attractive, very bright ruby garnet with distinct crimson hues at the rim. Aromatically it is as striking as it is seductive. Bright red fruits - raspberry, strawberry and Morello cherry have immediate impact with an equally impressive array of oriental spices - anise and clove. Ripe seed aromas of almond kernel and cherry stone lift the nose. Time reveals an inner core of darker black cherry, and just a hint of bramble all kept in check by some very attractive yet subtle French oak. The palate is soft, silken and warm but with a certain nervosité which is to say that as a young wine it may appear both bright in acidity and forward in tannins, but that’s just for starters. Those are simply the framework in which the wine is cradled, the fruit depth is palpable, the Pinosity generous and its presence authoritative.
