CARMƉNƈRE | 2019 Colchagua Valley Organic Wine COMPOSITION 100% CarmĆ©nĆØre WINEMAKERā€™S NOTES After destemming, the grapes are cold macerated for five days in open top stainless-steel tanks and fermented with native yeasts. After primary fermentation, the wine is macerated with its skin for another ten days to achieve greater smoothness and intensity of flavors. Finally, the wine is racked to neutral oak barrels and aged for 8 months. 2019 VINTAGE A good harvest in the Colchagua Valley, with favorable weather conditions that, despite the scarcity of precipitation, gave us a good ripening curve. Harvest began during the projected timeframe and gave us intense fruit with great balance between the acidity and the tannins. It gave us a fresh carmĆ©nĆØre, with structure and a smooth finish. CABERNET SAUVIGNON | 2020 COLCHAGUA VALLEY EXPRESSIVE ā€¢ INTENSE ā€¢ RICH Aromas of ripe black fruit, leather and vanilla are complemented with cassis flavors and hints of spices, with a long velvety finish. A challenging early harvest, with the principal factor being a winter with low levels of precipitation that favored our organic vineyards. Severe frosts in some zones of the valley affected yields, but maintained the quality of the grapes, and summer saw elevated temperatures. ROSƉ SYRAH | 2019 Casablanca Valley Organic Wine COMPOSITION 100% Syrah WINEMAKERā€™S NOTES The grapes are harvested in the early morning to keep them bright and fresh. The fruit goes in whole cluster into the press and is then racked off to stainless steel tanks for cold fermentation before it is bottled. 2019 VINTAGE An excellent harvest in the Casablanca Valley. The moderate temperatures during spring, without significant rains, allowed for good bud break and flowering. During summer there were no large diurnal temperatures, benefitting the ripening curve and helping maintain the freshness of the fruit in this zone. Harvest was pushed up by 10 days with respect to last year, and with lower yields that produced intense aromatics and flavors, producing fresh, intense wines with balanced acidity and a long finish. Nicely done. The CamĆ©nĆØre vines for this wine are south facing along the Tinguiririca River. The grapes are handpicked with a double selection before macerating in open stainless-steel tanks with native yeasts. The skins remain after fermentation to give structure and soften its finish. The best blocks from the harvest are then selected and blended before aging in French oak barrels for 12 months. Nose: Aromas of red fruits, cedar and boldo herbs. CHARDONNAY | 2022 CASABLANCA VALLEY BRIGHT ā€¢ LUSCIOUS ā€¢ SMOOTH Fresh and expressive aromas of pear, quince, and lemon curd, interwoven with toasty oak notes. On the palate, vibrant purity of the fruit, with a beautiful texture and depth that leads to a memorable long finish. A very expressive and elegant wine. This vintage in Casablanca presented good conditions starting in spring, setting us up for excellent flowering and fruit set. Harvest began the last week of February, which was slightly delayed from what we had planned. However, things sped up and we had a very good ripening curve, especially at the end of the season. This year, the first varieties to be harvested were Chardonnay and Pinot Noir, having received very good temperatures from October onwards. This Chardonnay is silky and mineral and is without a doubt an elegant and expressive wine. Recommended Serving Temperature: 12ĀŗC Food Pairing: Seafood, Chicken Salad "A pure chardonnay here with some wet stones, green pineapples and lime. Nice texture on the crisp, linear palate. SAUVIGNON BLANC | 2021 CASABLANCA VALLEY VIBRANT ā€¢ CRISP ā€¢ FRESH Vibrant and aromatic, with citrus aromas of lime and tangerine, blended with subtle floral notes. Smooth and fresh, this Sauvignon Blanc has a great mouthfeel and a long finish. After several years the 2021 harvest started by the end of February in what we refer to as ā€œnormal timingā€, the main reason is given that we had a colder season that led into a slower maturation curve, thus accomplishing a more homogeneous process that brought complexity and intensity to the grapes. The characteristics of this harvest derived in moderate yields, which benefited the concentration of the fruit, allowing for its origins and variety to express themselves to its full potential. As always, the first variety to be harvested was our Sauvignon Blanc, this year surprised us with great aromatic potential, both fresh and expressive. Being the result of a cold year, it delivers freshness in the mouth, with a long crispy acidity at the end.
