Estate grown on 3 blocks with differing soil structure, wind exposure and clones – early 1980’s selections from St Helena and more recent Dijon clones. The colour is an attractive, very bright ruby garnet with distinct crimson hues at the rim. Aromatically it is as striking as it is seductive. Bright red fruits - raspberry, strawberry and Morello cherry have immediate impact with an equally impressive array of oriental spices - anise and clove. Ripe seed aromas of almond kernel and cherry stone lift the nose. Time reveals an inner core of darker black cherry, and just a hint of bramble all kept in check by some very attractive yet subtle French oak. The palate is soft, silken and warm but with a certain nervosité which is to say that as a young wine it may appear both bright in acidity and forward in tannins, but that’s just for starters. Beronia Rueda Verdejo Blanco 2022 is the only wine made by Beronia Rueda, the González Byass group’s winery based in that Denominación located in the region of Castile. A unique single-varietal that’s the result of double harvesting and full fermentation in stainless steel and concrete vats. Elegant, fresh and mouth coating.   The white Beronia Rueda Verdejo 2022 was designed from grapes that were harvested in two stages: in the first, the earliest grapes that give the wine its freshness and a slight herby touch were picked; the second was focused on selecting the ripest and most concentrated berries to lend it volume. These are the ingredients that go into making Bodegas Beronia Rueda, the only wine produced by the González Byass group’s firm based in Rueda, a Denominación de Origen located in the region of Castile.  As in the three previous vintages, the grapes from the two harvests were processed separately and fermented in stainless and concrete vats. The final blend is a versatile, single-varietal Rueda wine that’s a perfect match both for exotic food such as Asian (sushi, for example) and for classic dishes like white fish, smoked fish and creamy cheeses. Beronia Reserva 2018

Beronia Reserva is made from a selection of the best grapes from the oldest Tempranillo vines, plus some Graciano y Mazuelo. After a spell undergoing cold pre-fermentation maceration and controlled fermentation with periodic pumping over to extract the desired colour and aromas, the wine spent 18 months in mixed French and American oak barrels to create the unmistakable “Beronia Style”. To make this wine, we take the best bunches of grapes from our oldest Tempranillo vineyards, where we use environmentally friendly practices inspired by how our forebears, the Berones, used to make wine in this same region more than 2000 years ago. Following cold pre-fermentation maceration, the wine ages in mixed barrels made of French and American oak (American oak staves and French oak ends) for at least eight months. Before being released onto the market, the wine completes its ageing with four months in bottle.

Starward's Sticky Toffee Apple whisky is the latest release from our Small Batch program where our distillers source unique barrels or trial something new. Our distillers sourced Apple Brandy barrels from the United States and finished our red wine matured, single malt whisky in these barrels for three years. These barrels worked hard in Melbourne's 'four seasons in one day', which allowed the delicious liquid to achieve the full orchard and oak experience. This resulted in our luscious Sticky Toffee Apple whisky which is bound to please every crowd; whisky lover or not. Nose: Floral notes of apple blossom and tropical fruits followed by vanilla and toffee apple. Palate: Ripe orchard fruits and almonds give way to luscious stewed apples and all spice. Fortis meaning ‘brave, bold’, is a full bodied, full flavoured whisky that celebrates local Australian ingredients. Bottled at a higher ABV of 50% and non-chill filtered, this whisky is fully matured in 100% American oak red wine barrels, predominately sourced from the Barossa Valley. These barrels, which previously held big Australian bold reds like cabernet and shiraz, offer a fuller and richer mouthfeel to this single malt whisky. Starward Fortis is blended in batches, meaning each batch will be unique but will maintain the core flavour profile and intensity. Nose: Very forward aromas of Madagascan vanilla pods, rich toasted American oak, blackberry jam, raisins, caramelised fig, raw sugar and over ripe plums. Palate: Rich and full bodied, upfront vanillin, quince paste, Muscadelle raisins, chocolate ganache, cinnamon and baked banana bread. Finish: Viscous and long. It really captures the whole palate and balances well with a finish of baking spices from the oak and ripe figs and raisins.

Coffee Old Fashioned is our take on a classic cocktail recipe, with a typically Melburnian caffeinated kick. We start with our award-winning whisky, aged in Melbourne’s variable weather in red wine barrels from world-class local wineries. Together with Mr Black’s delicious cold brew coffee liqueur and our distillery made orange bitters, we intended our rich, fruity whisky to shine in a cocktail. Taste this, and we rest our case. Pour over ice with a twist of orange peel to garnish. Best served with chocolatey dessert or tiramisu. One word of warning though. Bring this to a party, and it might just steal the limelight. Nose: Intense coffee, vanilla with a hint of orange peel. Palate: Coffee forward followed by dark chocolate and cacao. Finish: Textural and rounding. Vanilla and light roasted coffee bean.
